Gemista with Minced Meat (Greek Stuffed Vegetables)
Why this recipe works
- Built-in flavour: The scooped tomato flesh seasons the rice from within, while onion, garlic, parsley and mint add freshness and depth.
- Tender, satisfying bake: The vegetables roast until soft and juicy, and the rice absorbs the pan juices for a moist, savoury filling.
- Potatoes cook alongside: Baking the potatoes in the same dish lets them soak up olive oil, tomato juices and the savoury cooking liquid.

Timing notes
- Let the tray settle: A short rest after baking helps the filling absorb the juices and makes the vegetables easier to serve without falling apart.
- Serve hot or warm: Gemista hold well once baked, but the rice is at its moistest while the pan sauce is still warm and spoonable.
Authenticity notes
- Meat or meat-free: Greek gemista are commonly made either with minced meat or as a meat-free rice-and-herb filling; this version is the heartier meat-filled style.
- Tray-baked with potatoes: Cooking the stuffed vegetables with potato wedges is a familiar home-style approach that turns the pan juices into part of the meal.
Ingredient notes
- Choose sturdy tomatoes: Use tomatoes that are ripe enough to give juice but firm enough to hold their shape once hollowed and baked.
- Use fresh herbs if possible: Fresh parsley and mint give the filling the bright, green flavour that defines this style of gemista.
Make-ahead tips
- Good for leftovers: The flavours settle well after chilling, making leftovers useful for lunch or a second dinner.
- Reheat covered: Warm leftovers covered in a 180°C (355°F) oven until piping hot, adding a small splash of water if the pan juices have tightened.
- Freeze after baking: Cool completely before freezing, then thaw thoroughly and reheat gently so the rice warms through without drying out.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Rinse the rice in a sieve under cold water until the water runs mostly clear, then drain well.
- Cut a lid from the top of each tomato and scoop out the flesh into a bowl, keeping the shells intact. Cut lids from the peppers, remove the seeds and pith, and set the vegetables and their lids aside.
- Grate the onion into the bowl with the tomato flesh, then crush in the garlic. Stir in 60 ml of the olive oil, the salt and black pepper.
- Warm a frying pan over medium heat and cook the minced beef until it loses its pink colour, breaking it up as you go. Tip it into the bowl, then add the rice.
- Finely chop the fresh parsley and fresh mint, then stir them through the filling. Taste and adjust with a little more salt and pepper if needed.
- Peel the potatoes and cut them into wedges. Arrange the potatoes in a baking dish, then nestle the tomatoes and peppers among them.
- Spoon the filling into the tomatoes and peppers, packing it lightly, and leave about 1 cm at the top for the rice to expand. Put the lids back on, then drizzle the remaining 30 ml olive oil over the vegetables and potatoes.
- Pour the water into the baking dish around the vegetables. Bake for 70 minutes, basting once or twice with the pan juices, until the vegetables are tender and the rice is cooked through.
- Rest for 5 minutes so the juices settle, then spoon the pan sauce over the gemista and potatoes to serve. If the tray looks dry at any point, add a small splash of water and continue baking.
Recipe notes
Tips
- Choose tomatoes that can sit flat in the baking dish; if they wobble, trim a very thin slice from the base so they stand upright.
- If you want a deeper, more caramelised finish, bake uncovered for the final 15 minutes, keeping an eye on the tops so they do not dry out.
Substitutions
- Replace Long-grain white rice with Basmati rice for a more fragrant filling.
- Replace Fresh mint with Fresh dill for a softer, aniseed-like herb note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of Water if needed to loosen the pan juices.
