Shawarma Platter with Spiced Chicken, Flatbreads and Garlic Yoghurt
Why this recipe works
- Warm, savoury spice: Cumin, coriander and sweet paprika season the chicken without making the dish hot, while lemon and yoghurt add brightness.
- Juicy chicken: Boneless chicken thighs stay tender in the pan and take on good colour from the yoghurt-based marinade.
- Built for sharing: Serving the sliced chicken, salad, flatbreads and sauce separately lets everyone assemble their own plate or wrap.

Common mistakes
- Avoid steaming the chicken: Cook the thighs in a single layer, using batches if needed, so they brown properly instead of releasing too much moisture.
- Let the chicken rest: Resting before slicing helps keep the juices in the meat and makes the slices neater.
- Use confident heat: Medium-high heat gives the marinade good colour; if the pan is too cool, the chicken can turn pale and wet.
Make-ahead tips
- Marinate briefly: The chicken can sit in the spiced yoghurt while the salad and sauce are prepared, or for up to 30 minutes for a little more flavour.
- Keep components separate: Store the chicken, salad and garlic yoghurt in separate containers so the salad stays fresh and the sauce keeps its texture.
- Reheat the chicken gently: Warm the chicken in a 180°C (355°F) oven until piping hot, then refresh the pita briefly in a dry pan.
Authenticity notes
- Home-style shawarma method: Traditional shawarma is cooked on a vertical spit; this version uses a frying pan to create a practical weeknight platter with similar spiced, sliced meat.
- Classic accompaniments: Flatbread, garlic yoghurt and a sharp chopped salad echo the familiar balance of warm meat, cool sauce and fresh vegetables.
Ingredient swaps
- Use chicken breast carefully: Chicken breast cutlets can replace thighs, but they cook faster and should be removed from the heat as soon as cooked through.
- Change the flatbread: Naan can be used instead of pita for a softer, slightly richer base.

Instructions
- In a bowl, mix the yogurt with half the garlic, the juice of half the lemon, ground cumin, ground coriander, sweet paprika, fine sea salt, and 1 tbsp olive oil. Add the chicken thighs and turn to coat well. Set aside to marinate while you prep the salad, or for up to 30 minutes if you have time.
- Dice the tomato and cucumber, and thinly slice the red onion. Toss with most of the fresh parsley, the remaining lemon juice, a pinch of fine sea salt, and 1 tbsp olive oil. Set aside so the flavours mingle.
- Stir the remaining garlic into the remaining yogurt and season with a small pinch of fine sea salt. Keep the sauce cool while you cook the chicken. If it thickens, loosen with a squeeze of lemon.
- Heat a large frying pan over medium-high heat and add the remaining 1 tbsp olive oil. Cook the chicken in a single layer for 5 to 7 minutes per side, until deeply browned and cooked through. Transfer to a board and rest for 5 minutes, then slice.
- Warm the pita bread in the dry pan for 30 to 60 seconds per side, just until soft and steamy. Arrange the sliced chicken on a platter with the salad and garlic yogurt sauce. Finish with the remaining parsley and serve straight away for sharing.
Recipe notes
Tips
- For the juiciest result, do not overcrowd the pan; cook the chicken in batches if needed so it browns rather than steams.
- If serving children, keep the spices as written but offer extra yogurt sauce on the side to mellow the flavour.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and ensure the chicken is cooked until piping hot throughout.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner platter; reduce cooking time and remove from the heat as soon as cooked through.
- Replace Pita bread with Naan bread for a softer, slightly richer flatbread.
Storage
- Refrigerate up to 3 days
- Store the chicken, salad, and yogurt sauce separately in airtight containers. Reheat the chicken in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, and warm the pita bread briefly in a dry pan; keep the salad and sauce chilled.
