Pytt i Panna (Swedish Hash with Fried Egg and Beetroot)
Why this recipe works
- Crisp edges and soft centres: Small potato dice brown quickly in the pan while staying tender inside.
- Beetroot cuts through the richness: The beetroot brings a bright, tangy contrast to the buttery potatoes, beef and egg.
- Built in one pan: Cooking the potatoes, onion, beef and eggs together keeps the method straightforward and lets the hash pick up extra flavour as it browns.

Texture tips
- For crisper potatoes: Keep the potato cubes small and give them enough space in the pan so they fry rather than steam.
- Cook off excess moisture: Let the beef brown until any liquid has evaporated before stirring it through the potatoes.
Common mistakes
- Avoid crowding the pan: If the pan is full, brown the potatoes first, lift them out, then cook the onion and beef before combining everything.
- Watch the eggs closely: Covering the pan helps the whites set, but the yolks can firm up quickly; cook longer only if you prefer fully set eggs.
Make-ahead tips
- Prepare the hash ahead: The cooked hash can be cooled and refrigerated, then reheated in a frying pan until piping hot.
- Add eggs fresh: Fry or cook the eggs just before serving, as reheated eggs tend to turn rubbery.
Authenticity notes
- A classic Swedish hash: Pytt i panna is recognised for its neat dice of potato, onion and meat, browned together and served with egg and beetroot.
- Flexible by nature: Many versions use leftover cooked meat, but minced beef gives this version a straightforward everyday cooking method.

Ingredients
Instructions
- Dice the potatoes into roughly 1 cm cubes and finely chop the onion. Dice the beetroot into small cubes and set aside. Roughly chop the parsley.
- Heat 1 tbsp rapeseed oil and half the butter in a large frying pan over medium-high heat. Add the potatoes with 0.75 tsp of the salt and fry for 12 to 15 minutes, turning often, until golden and crisp in places. If the pan looks dry, add a splash more oil.
- Push the potatoes to one side and add the remaining oil and butter. Add the onion and cook for 3 to 4 minutes until softened and starting to colour. Add the minced beef, break it up, and fry for 6 to 8 minutes until browned and any liquid has cooked off.
- Stir everything together and fry for 2 to 3 minutes so the hash takes on more colour. Season with the remaining salt and most of the black pepper. Fold in the beetroot just to warm it through, about 1 minute.
- Make three small wells in the hash and crack in the eggs. Reduce the heat to medium-low, cover, and cook for 4 to 6 minutes until the whites are set and the yolks are still runny, or cook longer if you prefer. Finish with the parsley and the remaining black pepper, and serve straight away.
Recipe notes
Tips
- For the best crisping, keep the potato dice small and avoid overcrowding the pan; if needed, brown the potatoes first, then tip them into a bowl while you cook the beef and onion.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs until the yolks are fully set.
Substitutions
- Replace rapeseed oil with olive oil for a slightly fruitier flavour.
- Replace unsalted butter with salted butter, then reduce the fine sea salt to taste.
Storage
- Refrigerate up to 2 days
- Cool and refrigerate the hash in an airtight container for up to 2 days. Reheat in a frying pan over medium heat with a small knob of unsalted butter until piping hot; fry fresh eggs to serve, as reheated eggs turn rubbery.
