Creole Red Beans and Rice with Andouille Sausage
Why this recipe works
- Layered flavour: Browning the andouille first renders smoky fat that seasons the onion, celery and green pepper from the start.
- Creamy beans: A long simmer softens the kidney beans and thickens the cooking liquid into a spoonable sauce for the rice.
- Good for planning ahead: The bean and sausage mixture reheats well, and keeping the rice separate helps preserve the best texture.

Adjust the heat
- For a milder bowl: Use less hot sauce in the pot and serve extra at the table so each person can adjust their own portion.
- For more heat: Choose a hotter hot sauce or add more just before serving, when its acidity and chilli flavour will stay bright.
- Taste after the sausage goes back in: Andouille contributes salt, smoke and heat, so adjust the final seasoning only after it has simmered with the beans.
Timing notes
- Active work comes first: Most of the hands-on cooking is chopping, browning and softening the vegetables; the bean simmer mainly needs occasional stirring.
- Keep it loose before serving: If the beans thicken while waiting, stir in a splash of water and warm gently until spoonable again.
Ingredient notes
- Do not skip the initial bean boil: Dried kidney beans need the first boil and rinse step before the main simmer, then should be cooked until fully tender.
- Andouille drives the flavour: The sausage brings smoke, garlic and gentle chilli heat; chorizo gives a different but still robust smoky profile.
Make-ahead tips
- Store the rice separately: Keep the beans and sausage apart from the rice so the grains do not absorb too much sauce in the fridge.
- Freeze the bean mixture: The beans and sausage freeze well once cooled; defrost overnight in the fridge before reheating.
- Reheat gently: Warm in a saucepan with a splash of water, stirring until the sauce is loose and the sausage is piping hot throughout.

Ingredients
Instructions
- Rinse the beans in a colander, then tip into a large pot and cover with plenty of cold water. Bring to the boil, boil for 10 minutes, then drain and rinse again.
- Peel and finely chop the onion, then finely chop the celery and green pepper. Slice the sausage into rounds and finely chop the garlic.
- Return the pot to medium heat and add the sausage. Cook for 6 to 8 minutes, stirring, until browned and the fat has rendered; lift the sausage out onto a plate, leaving the fat in the pot.
- Add the onion, celery and green pepper to the pot and cook for 8 to 10 minutes until softened. Stir in the garlic, smoked paprika, dried thyme and fine sea salt, and cook for 1 minute until fragrant.
- Add the beans back to the pot with the bay leaves and cover with fresh water by about 3 cm. Bring to a gentle simmer and cook for 60 to 75 minutes, stirring occasionally, until the beans are tender and the liquid is creamy; add a splash more water if it looks dry.
- While the beans simmer, cook the rice in a saucepan in boiling salted water until tender. Drain well and cover to keep warm.
- Stir the browned sausage back into the beans and simmer for 5 minutes to bring everything together. Stir in the hot sauce, then taste and adjust with a little more fine sea salt if needed; remove the bay leaves.
- Spoon the rice into bowls and ladle the red beans and sausage over the top. Serve with extra hot sauce at the table.
Recipe notes
Tips
- For a creamier texture, mash a ladleful of beans against the side of the pot, then stir back in during the last 10 minutes of simmering.
- If serving vulnerable groups, make sure the beans are fully tender and the sausage is piping hot throughout before serving.
Substitutions
- Replace Andouille sausage with Chorizo sausage for a different smoky heat.
- Replace Hot sauce with Sriracha for a thicker, slightly sweeter heat.
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool the beans and sausage quickly, then refrigerate in a sealed container for up to 3 days. Freeze the beans and sausage (separately from the rice for best texture) for up to 3 months; defrost overnight in the fridge and reheat gently in a saucepan with a splash of water until piping hot.
