Dutch Pearl Barley Bowl with Seasonal Vegetables, Egg and Gouda

A Dutch-style pearl barley bowl brings together the chew of cooked barley with roasted seasonal vegetables, a soft-boiled egg and aged Gouda. Pearl barley gives the bowl a nutty, satisfying base, while courgette, carrot and red pepper roast until tender and lightly browned. Wholegrain mustard and cider vinegar add a tangy savoury edge that keeps the dish bright rather than heavy. Finished with parsley and shavings of cheese, it works well as a balanced vegetarian lunch: warm, filling, easy to assemble, and flexible enough for whichever firm roasting vegetables are in season.

Why this recipe works

  • Bright, balanced dressing: Whole-grain mustard and apple cider vinegar cut through the richness of the egg and Gouda without overpowering the barley.
  • Contrasting textures: Chewy pearl barley, tender roasted vegetables, creamy yolk and firm aged cheese make the bowl feel complete.
  • Easy to prepare ahead: The barley and roasted vegetables store well together, while the egg and cheese can be added just before serving.

Ingredient notes

  • Use firm vegetables: Firm courgette, carrot and pepper roast cleanly and hold their shape in the bowl.
  • Aged Gouda adds depth: Aged Gouda gives a salty, nutty finish; shave or grate it finely so it distributes through the warm grains.
  • Adjust the tang: If the vegetables taste flat after roasting, add a little extra cider vinegar or mustard to sharpen the finish.

Common mistakes

  • Skipping the steam-dry: Drain the barley well and let it steam-dry briefly so the bowl stays nutty rather than watery.
  • Overfilling the tray: Give the vegetables enough space on the baking tray so they brown at the edges instead of steaming.
  • Overcooking the egg: Cool the egg briefly under cold running water after boiling to keep the yolk soft.

Make-ahead tips

  • Cook the base in advance: The barley and roasted vegetables can be cooked ahead and stored together in the fridge.
  • Keep the egg separate: Store the egg separately and peel it just before serving for the neatest finish.
  • Reheat before topping: Warm the barley and vegetables until piping hot, then add the egg, Gouda and parsley.

Ingredient swaps

  • Swap the mustard: Dijon mustard can replace whole-grain mustard for a smoother, sharper dressing.
  • Change the cheese: Gruyere works well in place of Gouda if you want a nuttier, slightly sweeter finish.

  1. Heat the oven to 220°C (430°F). Bring a saucepan of well-salted water to the boil for the barley.
  2. Cook the pearled barley for 25 to 30 minutes until tender with a little bite. Drain well in a colander and set aside to steam-dry.
  3. Meanwhile, cut the courgette and carrots into bite-size pieces, and cut the red pepper into chunky squares. Tip onto a baking tray and toss with the extra virgin olive oil, whole-grain mustard, apple cider vinegar, half the fine sea salt and half the black pepper.
  4. Roast for 18 to 22 minutes, turning once, until the vegetables are tender and lightly browned at the edges. Taste and season with a little more salt and pepper if needed.
  5. While the vegetables roast, soft-boil the eggs: lower them into gently boiling water and cook for 6.5 minutes. Cool briefly under cold running water, then peel.
  6. Finely chop the fresh parsley and grate or shave the Gouda cheese. Divide the barley between two bowls, top with the roasted vegetables, then add the eggs and finish with the Gouda and parsley.

Recipe notes

Tips

  • For a cleaner soft-boiled egg, use eggs straight from the fridge and start timing as soon as the water returns to a gentle boil.
  • If serving later, keep the eggs unpeeled until you are ready to eat, then peel and halve for the neatest finish.

Substitutions

  • Replace Whole-grain mustard with Dijon mustard for a smoother, sharper dressing.
  • Replace Gouda cheese with Gruyere cheese for a nuttier finish.

Storage

  • Refrigerate up to 2 days
  • Store the barley and roasted vegetables together in an airtight container in the fridge. Keep the Egg separate; peel just before serving if possible. Reheat the barley and vegetables in the microwave until piping hot, then top with the egg and Gouda cheese.
