Bistec a la Criolla (Colombian Creole Steak)
Why this recipe works
- Built-in flavour base: Searing the steak first leaves browned bits in the pan, which enrich the tomato and onion sauce as it simmers.
- Bright but savoury: Red wine vinegar lifts the sweetness of the cooked tomatoes and onions without making the sauce sharp.
- One-pan method: The steak, aromatics and sauce all cook in the same frying pan, keeping the method direct and the flavour concentrated.

Authenticity notes
- Colombian home-style steak: This is a practical, saucy steak preparation rather than a dry grilled steak, with the vegetables forming part of the dish.
- How it is commonly served: Plain rice, potatoes or plantain work well because they absorb the tomato-onion sauce.
Ingredient notes
- Choose a quick-cooking steak: A moderately thin steak suits this method best, as it can brown quickly and finish gently in the sauce.
- Use ripe tomatoes: Ripe tomatoes break down more readily and give the sauce a fuller, naturally sweet flavour.
- Adjust the tang: If the tomatoes taste very sharp, let the sauce simmer a little longer before returning the steak to the pan.
Common mistakes
- Overcooking the steak: Once the steak goes back into the pan, keep the simmer gentle and stop when it reaches your preferred doneness.
- Scorching the aromatics: Garlic and cumin only need a short cook before the tomatoes are added; prolonged high heat can make them bitter.
- Leaving the sauce too loose: Let the tomatoes reduce until the sauce looks glossy and clings lightly to the meat rather than pooling thinly.
Make-ahead tips
- Prep the vegetables ahead: The tomatoes, onion, garlic and coriander can be chopped in advance to make the cooking stage faster.
- Reheat gently: Warm leftovers in a frying pan with a splash of water until piping hot, taking care not to toughen the steak.

Instructions
- Pat the steak dry, then season both sides with the salt and black pepper. Cut the tomatoes into small chunks, thinly slice the red onion, and finely chop the garlic. Roughly chop the fresh coriander.
- Heat the sunflower oil in a large frying pan over medium-high heat. Sear the steak for 2 to 3 minutes per side until well browned, then transfer to a plate.
- Reduce the heat to medium and add the red onion to the same pan. Cook for 3 to 4 minutes, stirring, until softened and starting to turn translucent. Stir in the garlic and ground cumin and cook for 30 seconds until fragrant.
- Add the tomatoes, red wine vinegar and water, scraping up any browned bits from the pan. Simmer for 5 to 7 minutes until the tomatoes break down and the sauce looks glossy and slightly thickened.
- Return the steak and any resting juices to the pan and spoon the sauce over the top. Simmer gently for 2 to 4 minutes until the steak is cooked to your liking and the sauce clings to the meat. Stir through most of the fresh coriander and scatter the rest over to serve.
Recipe notes
Tips
- For a tender result, keep the simmer gentle once the steak goes back in, and stop cooking as soon as it reaches your preferred doneness.
- If the sauce reduces too quickly, add a splash more water and keep simmering until the tomatoes taste sweet and cooked through.
Substitutions
- Replace red wine vinegar with apple cider vinegar for a slightly fruitier tang.
- Replace fresh coriander with fresh flat-leaf parsley if you prefer a milder herb finish.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water until piping hot, taking care not to overcook the steak.
