Lomo Saltado (Peruvian Beef Stir-Fry with Chips)
Why this recipe works
- Savoury, tangy depth: Soy sauce brings umami while red wine vinegar cuts through the richness of the beef and fried potatoes.
- High-heat character: A very hot pan gives the beef and onion quick browning without overcooking the vegetables.
- Crisp chips, glossy stir-fry: Double-fried chips add crunch beside the juicy beef, softened tomato and lightly charred onion.

Adjust the heat
- For gentler heat: Start with less aji amarillo paste, then add more at the end if the sauce needs extra warmth.
- For more chilli flavour: Increase the aji amarillo gradually so the fruity chilli flavour stays balanced with the soy sauce and vinegar.
Texture tips
- Get a proper sear: Keep the wok or frying pan very hot and sear the beef in a single layer so it browns quickly rather than releasing liquid.
- Keep the chips crisp: Serve the chips alongside the stir-fry rather than mixing them through too early, as the sauce will soften them.
Authenticity notes
- Peruvian chifa influence: The combination of stir-fried beef, soy sauce, tomato and onion reflects Peru’s Chinese-influenced chifa cooking style.
- Rice and chips together: Serving lomo saltado with both white rice and chips is part of the dish’s recognisable appeal, soaking up the sauce while adding contrast.
Common mistakes
- Overcrowding the beef: Too much beef in the pan lowers the heat and makes the meat steam; cook in batches if needed.
- Cooking the tomatoes too long: Add the tomatoes near the end so they soften slightly but still hold their shape in the finished stir-fry.

Ingredients
Instructions
- Rinse the rice until the water runs mostly clear, then cook it in a large pot of lightly salted water for 10 to 12 minutes until tender. Drain well and cover to keep warm.
- Peel the potatoes and cut into chips about 1 cm thick. Soak in cold water for 5 minutes, then drain and pat very dry.
- Heat the sunflower oil in a deep pan to 170°C (340°F). Fry the chips in batches for 6 to 8 minutes until pale golden and tender, then lift out and drain; increase the oil to 190°C (375°F) and fry again for 2 to 3 minutes until deep golden and crisp, seasoning with a pinch of the salt.
- Slice the beef into strips about 1 cm thick and season with most of the remaining salt and the pepper. Cut the onion into thick wedges, cut the tomatoes into wedges, and finely grate the garlic.
- Set a wok or large frying pan over very high heat until smoking hot, then add 1 tbsp of the hot sunflower oil from the chip pan. Sear the beef in a single layer for 60 to 90 seconds per side until browned but still pink inside, then tip onto a plate.
- Add the onion to the wok and stir-fry for 1 to 2 minutes until lightly charred at the edges but still crisp. Stir in the garlic and aji amarillo paste for 30 seconds, then add the tomatoes and cook for 1 minute to soften slightly.
- Return the beef and any juices to the wok, then add the soy sauce and red wine vinegar. Toss for 30 to 60 seconds until glossy and the sauce lightly coats everything; taste and adjust with the remaining salt if needed.
- Roughly chop the fresh coriander and fold most of it through the stir-fry. Serve straight away with the chips and warm rice, scattering over the remaining coriander.
Recipe notes
Tips
- For the best sear, keep the pan very hot and cook the beef in batches so it browns quickly rather than stewing.
- If you prefer a milder heat, start with half the aji amarillo paste, then add more at the end to taste.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, cook the beef until well done.
Substitutions
- Replace Beef sirloin steak with Beef rump steak for a similar quick-cooking cut.
- Replace Red wine vinegar with White wine vinegar for a slightly softer acidity.
- Replace Sunflower oil with Vegetable oil for frying and stir-frying.
Storage
- Refrigerate up to 2 days
- Store the stir-fry and rice in separate airtight containers. Reheat the beef mixture in a hot frying pan with a splash of water until piping hot; reheat the rice in the microwave until steaming. Chips are best eaten fresh, but can be reheated on a baking tray at 220°C (430°F) for 8 to 10 minutes.
