Chicken Fatteh with Toasted Flatbread

Chicken fatteh is a generous Middle Eastern layered dish where crisp pieces of toasted flatbread meet warm chickpeas, shredded chicken and a garlicky yoghurt sauce. The pleasure is in the mix of textures: bread that softens at the edges while staying crunchy in places, tender spiced chicken, creamy tang from the yoghurt, and toasted pine nuts for a rich finish. It is best assembled just before serving, so the hot chickpeas and sauce soak into the base without turning it heavy. Finished with olive oil and lemon, it makes a satisfying dinner that feels both comforting and fresh.

Why this recipe works

  • Layered texture: Crisp pita, tender shredded chicken, soft chickpeas and toasted pine nuts give the dish contrast in every spoonful.
  • Bright, creamy balance: Lemon sharpens the yoghurt sauce, keeping the dish fresh rather than heavy.
  • Classic fatteh structure: The bread, chickpeas, protein and yoghurt are layered just before serving, which is central to the character of fatteh.

Authenticity notes

  • Levantine-style layering: Fatteh is built around bread, legumes and a yoghurt-based sauce, with the exact toppings varying by household and region.
  • Adaptable protein: Chicken is one common version, but the same format is often adapted with different meats or served more simply with chickpeas.

Texture tips

  • Keep the bread crisp: Assemble only when ready to serve so the hot chickpeas and yoghurt soften the pita slightly without making it collapse.
  • Warm the yoghurt gently: Use very low heat and stir constantly; boiling can cause the yoghurt sauce to split or turn grainy.

Make-ahead tips

  • Store in parts: Keep the chicken and chickpeas separate from the yoghurt sauce, and toast fresh pita when serving for the best texture.
  • Reheat with care: Warm the chicken and chickpeas until piping hot, then gently warm the yoghurt sauce separately without letting it boil.

Ingredient notes

  • Use thick yoghurt: Greek yoghurt gives the sauce body and a clean tang, while a little water helps loosen it to a spoonable consistency.
  • Toast the nuts carefully: Pine nuts colour quickly, so move them from the hot pan as soon as they are golden and fragrant.

  1. Heat the oven to 220°C (430°F). Put the chicken thighs on a baking tray and rub with 2 tbsp of the olive oil, the ground cumin, 1 tsp of the fine sea salt, and the black pepper. Roast for 18 to 22 minutes, until cooked through and lightly browned.
  2. Meanwhile, split the pita bread into two thin rounds, then tear into bite-size pieces. Spread on a baking tray, drizzle with 1 tbsp olive oil, and bake for 6 to 8 minutes, turning once, until crisp and golden. Keep an eye on it as it colours quickly.
  3. Drain and rinse the canned chickpeas, then tip into a saucepan with 200 ml water and 0.5 tsp fine sea salt. Warm over a low heat for 5 to 7 minutes until hot, then cover and keep warm. If the pan looks dry, add a splash more water.
  4. In a mixing bowl, whisk the greek yogurt with the juice of half the lemon, 0.5 tsp fine sea salt, and 2 tbsp water until smooth and pourable. Finely grate or crush the garlic and stir it through. Taste and add a little more lemon juice if you want it sharper.
  5. Toast the pine nuts in a dry frying pan over a medium heat for 2 to 4 minutes, stirring often, until golden and fragrant. Tip straight into a bowl so they do not keep cooking in the hot pan. Wipe out the pan if needed.
  6. When the chicken is ready, rest it for 5 minutes, then shred it with two forks. Warm the yoghurt sauce gently in a saucepan over a low heat for 2 to 3 minutes, stirring constantly, just until warm; do not let it boil. Add a splash of water if it thickens too much.
  7. To assemble, spread the toasted pita in the base of a serving dish. Spoon over the hot chickpeas and their cooking liquid, then pile on the shredded chicken. Spoon over the warm garlicky yoghurt, scatter with the toasted pine nuts, and finish with the remaining 2 tbsp olive oil; serve immediately while the bread is still crisp.

Recipe notes

Tips

  • Keep the yoghurt sauce on a very low heat and stir constantly; if it starts to steam heavily, take it off the heat to prevent splitting.
  • For the best texture, assemble at the last minute so the toasted pita stays crisp.
  • If serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised greek yogurt and ensure the chicken is cooked through.

Substitutions

  • Replace chicken thighs with chicken breast for a leaner result; roast until just cooked through, then shred.
  • Replace pine nuts with almonds for a similar toasted crunch.
  • Replace pita bread with naan bread, split and toasted the same way.

Storage

  • Refrigerate up to 2 days
  • Store the chicken and chickpeas together in an airtight container, and the yoghurt sauce separately. Reheat the chicken and chickpeas in a saucepan with a splash of water until piping hot, then warm the yoghurt sauce very gently without boiling; toast fresh pita for serving.
