Thanksgiving Roast Turkey with Herb Butter and Gravy
Why this recipe works
- Herb butter seasons deeply: Rubbing lemon and herb butter under the skin helps flavour the breast meat directly while encouraging a richly browned exterior.
- A hot start builds colour: Beginning the roast at 220°C (430°F) helps the skin brown before the oven is lowered for gentler, more even cooking.
- Gravy uses the best flavour: The pan drippings are whisked with flour and stock, turning the roast juices into a savoury gravy that ties the turkey and sides together.

Timing notes
- Take off the chill: Letting the turkey stand out of the fridge before roasting helps it cook more evenly from edge to centre.
- Use a thermometer, not the clock: Roasting times vary with the size and shape of the bird, so check for 74°C (165°F) in the thickest part of the thigh without touching bone.
- Rest before carving: A full rest gives the juices time to redistribute, making the meat easier to carve and less likely to dry out on the board.
Texture tips
- Dry skin browns better: Pat the turkey very dry before adding the butter; excess surface moisture slows browning and can soften the skin.
- Protect the breast if needed: If the skin is darkening before the thigh is cooked, loosely cover the breast with foil to slow browning while the rest of the bird finishes.
Common mistakes
- Avoid cooking past done: Carryover heat continues to affect the meat as it rests, so remove the turkey once it reaches the safe internal temperature rather than extending the roast unnecessarily.
- Add stock gradually for gravy: Whisk the stock into the flour and drippings gradually so the gravy thickens smoothly without lumps.
Make-ahead tips
- Prepare the aromatics early: The herbs, onion, celery, garlic and lemon can be prepared ahead and kept chilled, reducing last-minute work before roasting.
- Reheat gently with gravy: Leftover sliced turkey reheats best with a little gravy to help keep the meat moist, in a 180°C (355°F) oven until piping hot.
- Freeze with moisture: For freezing, pack carved turkey with some gravy so it is less likely to dry out after defrosting and reheating.

Instructions
- Take the turkey out of the fridge 1 hour before roasting so it loses its chill. Heat the oven to 220°C (430°F). Put a rack in a roasting pan if you have one.
- Finely grate the lemon zest, then cut the lemon in half. Strip the leaves from a few thyme sprigs and chop enough sage and rosemary to give about 2 tbsp mixed herbs. In a bowl, mash the butter with the lemon zest, chopped herbs, 3 tsp of the salt and 1 tsp of the pepper.
- Pat the turkey dry all over, including the cavity. Gently loosen the skin over the breast with your fingers, taking care not to tear it, then rub about two-thirds of the herb butter under the skin. Rub the remaining butter over the outside and season with the remaining salt and pepper.
- Quarter the onion and cut the celery into large pieces. Halve the garlic head crossways. Put the onion, celery, garlic, remaining thyme sprigs, remaining rosemary sprigs, remaining sage leaves and the lemon halves into the cavity, then tuck the wing tips under the bird.
- Set the turkey in the roasting pan and pour 250 ml of the chicken stock into the pan. Roast for 30 minutes to start browning the skin. Reduce the oven to 170°C (340°F) and continue roasting, topping up the pan with a splash of stock if it looks dry.
- Start checking the turkey 30 minutes before you expect it to be done. It is ready when a thermometer reads 74°C (165°F) in the thickest part of the thigh without touching bone, and the juices run clear. If the skin is browning too quickly, loosely cover the breast with foil.
- Lift the turkey onto a board and rest for 30 minutes before carving. Spoon off and discard most of the fat from the roasting pan, leaving the drippings behind. Keep the pan warm while the turkey rests.
- Set the roasting pan over a low heat on the hob if it is safe to do so, or scrape the drippings into a saucepan. Whisk in the plain flour and cook for 2 minutes until it smells nutty but has not darkened too much. Gradually whisk in the remaining chicken stock, simmering for 8 to 10 minutes until thickened, then season with black pepper to taste.

Tips
- For the juiciest result, rely on a thermometer rather than timings, as roasting time varies with the size and shape of the bird.
- If you are serving anyone who is pregnant, elderly, very young, or immunocompromised, make sure the turkey reaches 74°C (165°F) in the thigh and the gravy is simmered until piping hot.
Substitutions
- Replace Lemon with Lime for a slightly sharper citrus note.
- Replace Fresh thyme with Fresh oregano for a more robust, peppery herb flavour.
Storage
- Refrigerate up to 3 days
- Cool carved turkey and gravy quickly, then refrigerate in sealed containers. Freeze sliced turkey with a little gravy to prevent drying; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot.
