Merluza a la Vasca (Basque-Style Hake with Parsley Sauce)
Why this recipe works
- Gentle flavour base: Garlic, parsley, white wine and fish stock create a savoury sauce that supports the hake without overwhelming it.
- Classic poaching method: Low, steady poaching keeps the hake tender while allowing the sauce to lightly coat the fish.
- Fresh finish: Lemon and parsley lift the briny clams and delicate fish, keeping the dish bright rather than heavy.

Authenticity notes
- Basque-style sauce: The parsley, garlic and white wine sauce reflects the clean, seafood-focused style associated with Basque hake dishes.
- Clams and asparagus: Clams add briny depth, while asparagus brings a seasonal green note; both are common partners for this style of hake.
Ingredient notes
- Choosing the hake: Use firm, fresh-looking hake fillets that can hold their shape during gentle poaching.
- Checking clams: Use only live clams: discard any that are cracked or remain open when tapped before cooking, and any that stay closed afterwards.
- Use fresh parsley: Fresh flat-leaf parsley gives the sauce its clean herbal flavour; dried parsley will not give the same brightness.
Common mistakes
- Cooking too hard: Avoid boiling once the hake is added. A gentle simmer helps keep the fish tender and the sauce smooth.
- Overcooking the fish: Hake is ready when opaque and just flaking; leaving it longer can make the fillets dry and fragile.
- Adding clams too early: Add the clams near the end so they open in the sauce without becoming tough.
Timing notes
- Serve straight away: This dish is at its best as soon as the hake is cooked and the clams have opened, while the sauce is glossy and fresh.
- Prep before heating: Slice the garlic, chop the parsley, trim the asparagus and check the clams before starting, as the cooking moves quickly once the sauce is underway.

Instructions
- Finely slice the garlic and roughly chop the parsley. Trim the woody ends from the asparagus, then cut into 4 to 5 cm lengths. Rinse the clams well under cold running water and discard any that are cracked or stay open when tapped.
- Warm the olive oil in a large frying pan over a low to medium heat. Add the garlic and cook for 1 to 2 minutes until fragrant but not coloured. Stir in most of the parsley, reserving a small handful to finish.
- Pour in the white wine and let it bubble for 2 minutes. Add the fish stock and bring to a gentle simmer. Whisk the cornflour with 2 tbsp of the hot liquid in a small bowl, then whisk it back into the pan.
- Add the asparagus and simmer for 3 to 4 minutes until just tender. Nestle in the hake, season with the fine sea salt and black pepper, then cover and poach gently for 6 to 8 minutes until the fish is opaque and flakes easily. Spoon the sauce over the fish once or twice as it cooks.
- Add the clams, cover again, and cook for 4 to 6 minutes, shaking the pan occasionally, until the clams have opened. Discard any that remain closed. Squeeze over a little lemon juice, scatter over the reserved parsley, and serve straight away with extra lemon at the table.
Recipe notes
Tips
- Keep the heat gentle once the fish goes in so the hake stays tender and the sauce remains glossy rather than splitting.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the hake is fully cooked and the clams are piping hot and all opened before serving.
Substitutions
- Replace Dry White Wine with an equal amount of Fish stock plus a squeeze of Lemon for a non-alcoholic version.
- Replace Cornflour with the same amount of Plain flour, whisked into the hot liquid in the same way, for a slightly more opaque sauce.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat gently in a covered pan over a low heat until piping hot, adding a splash of Fish stock if the sauce has thickened. Discard any leftover clams still in their shells.
