Cantonese Steamed Chicken with Mushrooms and Glass Noodles
Why this recipe works
- Aromatic savoury base: Light soy sauce, Shaoxing wine, oyster sauce, ginger, garlic and sesame oil give the chicken depth without making the dish heavy.
- Gentle steaming: Steaming keeps the chicken thighs juicy while allowing the mushrooms to release their flavour into the sauce.
- Noodles cook in the juices: The glass noodles sit underneath the chicken, soaking up the seasoned juices as everything cooks in one heatproof dish.

Timing notes
- Short marinade: The 10-minute marinade is enough for bite-size chicken pieces; the cornflour helps the seasoning cling as the chicken steams.
- Brief rest before serving: Letting the dish stand briefly after steaming helps the juices settle and gives the noodles time to absorb more sauce.
- Best served hot: Serve straight from the steamer while the chicken is juicy and the noodles are still soft and glossy.
Ingredient notes
- Use chicken thighs: Boneless, skinless chicken thighs are well suited to steaming because they stay tender and moist.
- Shaoxing wine: Shaoxing wine adds a mellow, aromatic note; dry sherry is the closest practical substitute.
- Prepare the noodles carefully: Drain the glass noodles well after soaking so they soften further in the steamer without turning watery.
Texture tips
- Keep the steam steady: A lively but controlled simmer gives even heat without toughening the chicken.
- Toss after steaming: Gently mixing the noodles through the sauce at the end gives them a silkier texture and fuller flavour.
- Do not lift the lid repeatedly: Opening the steamer releases heat and can extend the cooking time, which risks drying the chicken.
Make-ahead tips
- Prep aromatics ahead: The mushrooms, ginger and garlic can be prepared in advance and kept covered in the fridge until cooking.
- Best freshly steamed: The dish is at its best when served immediately, before the glass noodles absorb too much sauce and firm up.
- Reheat gently: Reheat in a steamer until piping hot, adding a small splash of water if the noodles need loosening.

Instructions
- Soak the glass noodles in just-boiled water in a saucepan for 6 to 8 minutes until pliable, then drain well. Rinse briefly under cold water to stop them over-softening, then set aside.
- Slice the shiitake mushrooms, then peel and finely grate the ginger and finely grate the garlic. Cut the chicken thighs into bite-size pieces.
- In a mixing bowl, stir together the light soy sauce, Shaoxing Cooking Wine, oyster sauce, caster sugar, white pepper, sesame oil and cornflour until smooth. Add the chicken and mushrooms and toss until everything is evenly coated, then leave to marinate for 10 minutes while you bring the steamer to the boil.
- Spread the drained glass noodles in a shallow heatproof dish that fits your steamer, then spoon the chicken and mushrooms over the top, scraping in all the marinade. Steam over a lively simmer for 14 to 16 minutes, until the chicken is cooked through and the juices run clear.
- Carefully remove the dish and gently toss the noodles through the sauce so they soak up the juices. Rest for 2 minutes, then serve straight away.

Tips
- For the juiciest result, keep the steamer at a steady simmer rather than a rolling boil, and avoid lifting the lid during steaming.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot all the way through.
Substitutions
- Replace Shaoxing Cooking Wine with dry sherry for a similar aroma.
- Replace oyster sauce with light soy sauce for a lighter, less sweet finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a steamer until piping hot; add a small splash of water to loosen the noodles if needed.
