Air Fryer Wontons

Wontons are small Chinese dumplings, usually wrapped around a savoury filling and served boiled, steamed, fried or in broth. This air fryer version leans into the crisp, snackable side of the dish, with minced pork seasoned with spring onion, ginger, garlic, soy and white pepper. A light brushing of sesame oil helps the wrappers turn golden without deep-frying, while the filling stays juicy inside. Served hot with a sharp soy and rice vinegar dip, they work well as an appetiser, party bite or simple dumpling-style supper alongside greens or rice.

Why this recipe works

  • Crisp without deep-frying: A light coating of sesame oil helps the wrappers brown and crisp in the air fryer.
  • Aromatic filling: Ginger, garlic, spring onion, soy sauce and white pepper give the pork filling a savoury, well-rounded flavour.
  • Fast cooking: Small filled wontons cook quickly in the air fryer, making them practical for a starter, snack or informal sharing plate.

Texture tips

  • For a crisper finish: Arrange the wontons in a single layer with space between them so hot air can circulate around the wrappers.
  • Keep cooked batches crisp: If cooking in batches, hold finished wontons in a 100°C (210°F) oven rather than covering them, which can trap steam.

Common mistakes

  • Avoid overcrowding: Too many wontons in the air fryer basket will steam the wrappers instead of crisping them evenly.
  • Seal out air pockets: Press the edges firmly and push out trapped air before sealing; air pockets can expand and split the wrappers during cooking.
  • Watch the final minutes: Thin wonton wrappers brown quickly, so check near the end of cooking to keep them golden rather than brittle.

Serving ideas

  • Dipping sauce: The soy and rice vinegar dip adds salt, acidity and brightness to balance the rich pork filling.
  • Fresh finish: Scatter over the reserved spring onion just before serving for freshness and a little crunch.

Make-ahead tips

  • Prep the filling ahead: The pork filling can be mixed in advance and kept chilled until you are ready to fill the wrappers.
  • Best served fresh: These wontons are at their crispest straight from the air fryer, though leftovers can be reheated at 180°C (355°F) until piping hot and crisp again.

  1. Thinly slice the spring onion. Finely grate the ginger and finely grate the garlic.
  2. In a mixing bowl, combine the minced pork with most of the spring onion, the ginger, garlic, 1 tbsp soy sauce, caster sugar and white pepper until sticky and well mixed. Reserve the remaining spring onion for serving.
  3. Lay out the wonton wrappers and keep the stack covered with a barely damp tea towel while you work. Spoon a small mound of filling into the centre of each wrapper, then brush a little water around the edges with wet fingers and seal into a triangle, pressing out any air.
  4. Preheat the air fryer to 190°C (375°F) for 3 minutes. Arrange the wontons in a single layer (cook in batches if needed), then lightly brush both sides with sesame oil. Air-fry for 7 to 9 minutes, turning halfway, until golden and crisp and the filling is cooked through.
  5. Stir together the remaining 1 tbsp soy sauce with the rice vinegar for a simple dipping sauce. Serve the wontons hot with the dip and the reserved spring onion scattered over.

Recipe notes

Tips

  • Seal the wrappers firmly and press out any air pockets, as trapped air can cause the wontons to split during air-frying.
  • To keep batches hot, hold the cooked wontons on a plate in a 100°C (210°F) oven while you finish air-frying the rest.

Substitutions

  • Replace Rice vinegar with White vinegar for a sharper, more acidic dipping sauce.
  • Replace Sesame oil with Olive oil for brushing if you want a more neutral flavour and just need help with browning.

Storage

  • Refrigerate up to 2 days
  • Cool completely, then refrigerate in a sealed container. Reheat in the air fryer at 180°C (355°F) for 3 to 5 minutes until piping hot and crisp again.
