Khao Pad Sapparod (Thai Pineapple Fried Rice)

Thai pineapple fried rice brings together the savoury depth of wok-fried jasmine rice with the juicy sweetness of ripe pineapple. Known as Khao Pad Sapparod, it is typically served hot as a colourful rice dish, often with seafood, egg and spring onion folded through for texture and richness. In this version, prawns add a clean, briny note while light soy sauce and fish sauce season the rice without overwhelming the fruit. A squeeze of lime at the table sharpens the sweetness and makes the dish feel fresh, fast and satisfying for an everyday dinner.

Why this recipe works

  • Bright sweet-savoury balance: Pineapple brings juicy sweetness, fish sauce and soy sauce add savoury depth, and lime sharpens the finish.
  • Fast wok cooking: The prawns, egg and rice cook quickly, making this a practical fried rice for a weeknight meal.
  • Separate rice, tender prawns: Steam-drying the cooked jasmine rice helps the grains stay distinct, while the prawns are added early enough to cook through without becoming tough.

Timing notes

  • Prepare before heating the wok: Have the pineapple, spring onion, garlic, egg and sauces ready before stir-frying, as the cooking moves quickly once the wok is hot.
  • Serve straight away: Fried rice is best served hot from the wok while the grains are separate and the pineapple is still juicy.

Texture tips

  • Keep the rice dry: Let the cooked rice steam-dry briefly before frying so it tosses cleanly instead of clumping or turning soft.
  • Watch the prawns: Cook the prawns just until pink and opaque before adding the rice, as they will continue to heat through during the final toss.

Ingredient notes

  • Use ripe pineapple: Ripe pineapple gives the dish its characteristic sweetness and acidity; underripe fruit can taste sharp and less fragrant.
  • Season carefully: Fish sauce and soy sauce both add saltiness, so taste before adding any extra seasoning.

  1. Cook the jasmine rice in a saucepan according to the packet instructions, then spread it on a plate and leave to steam-dry for 5 minutes. Meanwhile, cut the pineapple into small chunks, thinly slice the spring onion, and finely chop the garlic. Crack the eggs into a bowl and beat lightly.
  2. Heat 1 tbsp of the vegetable oil in a wok (or large frying pan) over medium-high heat. Pour in the eggs and scramble for 30 to 60 seconds until just set, then tip onto a plate. Wipe the wok if needed.
  3. Return the wok to medium-high heat and add the remaining 1 tbsp vegetable oil. Add the garlic and stir-fry for 20 to 30 seconds until fragrant, then add the prawns and cook for 2 to 3 minutes until pink and opaque. Add the pineapple and cook for 1 minute to warm through.
  4. Add the cooked rice and toss well, breaking up any clumps, until hot throughout. Stir in the light soy sauce, fish sauce and caster sugar, then return the scrambled egg to the wok. Add most of the spring onion, reserving a little to finish, and stir-fry for 1 to 2 minutes until everything is evenly coated.
  5. Cut the lime into wedges. Serve the fried rice hot, topped with the reserved spring onion, with lime wedges on the side for squeezing over.

Recipe notes

Tips

  • For the best texture, use rice that is cooked until just tender and allowed to steam-dry briefly before frying, so it stays separate in the wok.
  • Keep the heat fairly high once the rice goes in and toss continuously so it warms quickly without turning soggy.
  • If serving to anyone vulnerable, make sure the eggs are fully set and the prawns are cooked through until opaque.

Substitutions

  • Replace light soy sauce with dark soy sauce for a deeper colour and slightly sweeter flavour, then reduce the caster sugar to 0.5 tsp.
  • Replace prawns with salmon, cut into bite-size pieces, and stir-fry until just cooked through before adding the rice.
  • Replace caster sugar with honey for a rounder sweetness; add it with the sauces so it dissolves evenly.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat in a hot wok or frying pan with a small splash of water and stir-fry until piping hot throughout.
