Dacquoise (Almond Meringue Layer Cake) with Coffee Buttercream
Why this recipe works
- Crisp layers, smooth filling: Dry-baked almond meringue gives the cake its light crunch, while coffee buttercream adds a soft, rich contrast.
- Nutty coffee depth: Ground almonds bring sweetness and toastiness, balanced by the gentle bitterness of coffee extract.
- Chills well before serving: A short chill firms the buttercream and makes the dacquoise easier to slice neatly.
- Classic sugar-syrup buttercream: Hot syrup whisked into egg yolks creates a stable, glossy base before the butter is beaten in.

Timing notes
- Cool the meringues fully: Let the almond discs cool completely before assembling; warmth will soften or melt the buttercream.
- Chill before slicing: At least 30 minutes in the fridge helps the buttercream set so the layers cut cleanly.
- Serve chilled or slightly softened: Slice straight from the fridge for the neatest result, or let the cake stand briefly for a softer buttercream.
Texture tips
- For drier meringue layers: Leave the baked discs in the switched-off oven with the door slightly ajar as directed; this helps drive off extra moisture.
- For smoother buttercream: Add the butter gradually and keep beating until the mixture emulsifies into a glossy, even texture.
- Protect the layers: Assemble only once the meringues are completely cool, and keep the finished cake covered in the fridge.
Common mistakes
- Deflating the meringue: Fold in the ground almonds gently; heavy mixing knocks out the air and can make the discs dense.
- Loose buttercream: If the buttercream looks slack, chill it briefly, then beat again until smooth and structured.
- Peeling too soon: Wait until the meringue discs are fully cool before removing the paper to reduce cracking and sticking.
Ingredient notes
- Use fine ground almonds: A finer texture folds more evenly into the meringue and helps the discs bake into tidy, delicate layers.
- Espresso changes the texture: If replacing coffee extract with espresso, reduce it until syrupy and cool it before adding so the buttercream stays stable.
- Start with room-temperature butter: Softened butter incorporates more smoothly into the yolk base and gives the buttercream a cleaner finish.

Instructions
- Heat the oven to 150°C (300°F). Line two baking trays, then draw three 20 cm circles (or use a plate as a guide) and turn the paper over so the pencil does not touch the meringue. Set the trays aside.
- In a clean bowl, whisk the egg whites with the salt to soft peaks. Add the caster sugar a spoonful at a time, whisking until the meringue is glossy and holds stiff peaks. Rub a little meringue between your fingers; it should feel mostly smooth, not gritty.
- Fold in the ground almonds in two additions, keeping as much air as possible. Spoon the mixture onto the circles and spread into even discs, about 1 to 1.5 cm thick. Smooth the tops so the layers stack neatly.
- Bake for 55 to 65 minutes, swapping trays halfway through, until the discs are dry to the touch and lightly golden. Turn the oven off, prop the door slightly ajar, and leave the meringues inside for 20 minutes to dry further. Cool completely on the trays before peeling away the paper.
- For the buttercream, put the caster sugar in a small saucepan with 40 ml water and heat gently until dissolved. Increase the heat and boil until the syrup reaches 118°C (245°F). While the syrup heats, whisk the egg yolks in a mixer bowl until slightly thickened and paler.
- With the mixer running on medium, carefully pour the hot syrup in a thin stream down the side of the bowl into the yolks. Whisk on high until the mixture is thick, glossy, and cool to the touch. This should take 8 to 10 minutes.
- Add the unsalted butter a cube at a time, beating until smooth and fully emulsified. Beat in the coffee extract, vanilla extract, and salt, then mix for 1 minute more until silky. If it looks loose, chill for 10 minutes and beat again.
- To assemble, place one meringue disc on a serving plate and spread with about one third of the buttercream. Repeat with the second disc and another third of the buttercream, then top with the final disc. Spread the remaining buttercream over the top and sides in a thin, neat layer.
- Chill the dacquoise for at least 30 minutes to set the buttercream and make slicing cleaner. Slice with a sharp knife, wiping the blade between cuts. Serve chilled or let stand 10 minutes for a softer buttercream.
Recipe notes
Tips
- Use a completely grease-free bowl and whisk for the egg whites; any fat can stop the meringue reaching full volume.
- If the meringue discs start to colour too quickly, reduce the oven to 140°C (285°F) and extend the bake until they feel dry.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised egg yolk and ensure the sugar syrup reaches 118°C (245°F).
Substitutions
- Replace Coffee Extract with espresso for a softer coffee flavour; reduce the espresso in a small pan until syrupy and cool before adding.
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla note.
- Replace Ground almonds with ground hazelnuts for a deeper, toastier nut flavour.
Storage
- Refrigerate up to 3 days
- Store covered in the fridge to protect the buttercream. For the cleanest slices, cut straight from the fridge; the meringue will soften slightly over time. Freeze slices well wrapped for up to 1 month and thaw overnight in the fridge.
