Air Fryer Caramelized Bananas

Caramelised bananas make a fast warm dessert from everyday ingredients, with ripe but firm fruit turning tender, glossy and lightly browned at the edges. Brown sugar, butter, cinnamon, vanilla and a pinch of salt give the bananas a simple caramel-like coating, while the air fryer helps concentrate the sweetness without needing a pan sauce. Served straight away with cool Greek yoghurt and toasted flaked almonds, the dish has a pleasing mix of soft fruit, creamy tang and nutty crunch. It suits a quick pudding, sweet snack or easy finish to a casual meal.

Why this recipe works

  • Fast caramelised finish: The air fryer gives the bananas concentrated heat, helping the sugar and butter turn glossy in just a few minutes.
  • Warm, cool and crunchy: Soft caramelised banana is balanced by chilled Greek yoghurt and toasted almonds for a more complete dessert.
  • Sweet but not flat: A pinch of salt, cinnamon and vanilla keep the brown sugar caramel from tasting one-dimensional.

Ingredient notes

  • Choose firm-ripe bananas: Use bananas that are sweet and yellow but still firm enough to hold their shape when turned in the basket.
  • Toast the almonds separately: Toasting the almonds in a dry pan gives a cleaner nutty flavour and keeps them crisp against the warm fruit.

Texture tips

  • Keep space in the basket: Arrange the banana pieces in a single layer so the edges caramelise rather than steam.
  • Handle gently when turning: Turn the bananas carefully halfway through cooking to keep the pieces intact as they soften.

Timing notes

  • Serve straight away: The caramel is glossiest and the yoghurt contrast is best while the bananas are still warm.
  • Best freshly cooked: Leftovers can be chilled briefly, but the texture is softer after reheating.

  1. Toast the sliced almonds in a dry frying pan over a medium heat for 2 to 3 minutes, stirring often, until lightly golden and fragrant. Tip onto a plate so they do not keep browning in the hot pan.
  2. Heat the air fryer to 190°C (375°F). Peel the bananas and slice each lengthways, then halve each piece crossways to make 4 shorter lengths per banana.
  3. Melt the butter and toss with the bananas, light brown sugar, ground cinnamon, fine sea salt and vanilla extract until well coated. Arrange in a single layer in the air fryer basket.
  4. Air-fry for 5 to 6 minutes, turning once halfway, until glossy, caramelised at the edges and tender. Spoon into bowls, add a dollop of greek yogurt, then scatter over the toasted sliced almonds and serve straight away.

Recipe notes

Tips

  • Keep the banana pieces in a single layer so they caramelise rather than steam; cook in batches if needed.
  • Serve immediately for the glossiest caramel and the best contrast with cool greek yogurt.

Substitutions

  • Replace Unsalted butter with Coconut oil for a dairy-free caramelised finish.
  • Replace Greek yogurt with Yogurt for a looser, lighter topping.

Storage

  • Refrigerate up to 1 days
  • Best eaten straight away. If you have leftovers, chill in an airtight container for up to 1 day and reheat in the air fryer at 170°C (340°F) for 2 to 3 minutes until piping hot; add the greek yogurt and almonds after reheating.
