Samak Harra (Spiced Whole Roasted Fish)
Why this recipe works
- Bold sauce: Garlic, chilli, coriander and cumin give the sauce its distinctive savoury heat without needing a long cooking time.
- Bright balance: Lemon juice cuts through the olive oil and roasted fish, keeping the finished dish fresh rather than heavy.
- Rustic texture: Coarsely crushed walnuts add a nutty crumb that contrasts with the soft, flaky fish.
- Efficient cooking: The sauce is made while the fish roasts, so the dish comes together in under an hour.

Adjust the heat
- For a milder sauce: Remove the chilli seeds before chopping, or use less chilli while keeping the garlic, cumin and lemon for flavour.
- For more heat: Leave the chilli seeds in, or choose a hotter red chilli if you want a sharper finish.
- Keep it bright: If the sauce tastes too hot, a little extra lemon juice can help balance the heat without dulling the flavour.
Ingredient notes
- Choosing the fish: Whole sea bass works well because it roasts quickly and stays moist; sea bream gives a similar result.
- Slash before roasting: Shallow cuts in the skin help the seasoning and sauce reach the flesh more evenly.
- Walnuts or pine nuts: Walnuts give the sauce a coarser, earthier texture, while pine nuts make it milder and slightly sweeter.
Common mistakes
- Overcooking the fish: Remove the fish as soon as the thickest part is opaque and flakes easily; whole fish can dry out if left too long.
- Making the sauce too thick: The sauce should be loose enough to spoon over the fish. If it feels pasty, loosen it gradually with a little more lemon juice or olive oil.
- Saucing too late: Spoon the sauce over while the fish is still hot so it runs into the slashes and flavours the flesh.
Serving ideas
- Simple sides: Serve with warm flatbread, rice, or a crisp salad to balance the rich, garlicky sauce.
- Fresh finish: Reserved coriander and extra lemon at the table keep the dish bright.
- Extra sauce: Keep some sauce on the side for spooning over individual portions or dipping bread.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Pat the sea bass dry, then make 3 shallow slashes on each side and set it on a baking tray.
- Rub the fish all over with 1 tbsp of the olive oil, then season with 1 tsp of the fine sea salt and the black pepper. Roast for 18 to 25 minutes, depending on size, until the flesh flakes easily and the thickest part is opaque.
- While the fish roasts, finely chop the red chili pepper and most of the fresh coriander, reserving a little coriander for serving. Crush the walnuts to a coarse crumb.
- Crush the garlic, then mix it in a bowl with the chopped chilli, chopped coriander, ground cumin, walnuts, the remaining 4 tbsp olive oil, and the remaining 0.5 tsp fine sea salt. Squeeze in the lemon juice, then stir until you have a spoonable, loose sauce.
- Transfer the hot fish to a serving platter and spoon most of the sauce over the top so it runs into the slashes. Scatter over the reserved coriander and serve straight away with the remaining sauce for dipping.
Recipe notes
Tips
- For the cleanest flavour, remove any dark bloodline along the backbone after roasting, then spoon a little extra sauce into the cavity before serving.
- If you are sensitive to heat, scrape out the chilli seeds before chopping; the sauce will stay punchy from the garlic and cumin.
- Fish is best served piping hot; if you are pregnant, elderly, or immunocompromised, make sure the thickest part is fully opaque and flakes easily before serving.
Substitutions
- Replace Sea bass with Sea bream for a similar whole-roasted result; roast until the flesh flakes easily.
- Replace Walnuts with Pine nuts for a milder, sweeter nutty note in the sauce.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate the fish and sauce separately. Reheat the fish on a baking tray at 180°C (355°F) until piping hot, and spoon the sauce over at the table.
