Gammon Steak with Parsley Sauce and Mash
Why this recipe works
- Classic comfort: Cured gammon, buttery mash and parsley sauce deliver the familiar savoury richness of a traditional British supper.
- Balanced richness: Lemon brightens the creamy sauce and helps offset the saltiness of the gammon.
- Ready quickly: The potatoes, sauce and gammon can be cooked in parallel, keeping the full meal within a short weeknight timeframe.
- Creamy finish: A simple white sauce and well-drained mashed potatoes give the plate a smooth, comforting texture.

Ingredient notes
- Choosing the gammon: Look for evenly cut gammon steaks so they cook at the same rate and brown without drying out.
- Use fresh parsley: Fresh parsley gives the sauce a cleaner, brighter flavour than dried parsley, which can taste muted in a milk-based sauce.
- Add lemon to taste: Start with a small squeeze and adjust at the end; the aim is brightness, not a sharp citrus sauce.
Texture tips
- For smoother mash: Let the drained potatoes steam-dry briefly in the hot pan before mashing so excess water does not loosen the texture.
- Keep the sauce silky: Whisk the milk in gradually and keep the heat moderate so the parsley sauce thickens evenly.
Common mistakes
- Do not overcook the gammon: Gammon steaks are already cured, so they only need to be browned and heated through; extended cooking can make them tough.
- Avoid a thick, pasty sauce: If the parsley sauce tightens too much, loosen it gradually with a little extra milk while whisking.
Make-ahead tips
- Reheat gently: Warm leftover mash and sauce slowly with a splash of milk, stirring often, and heat the gammon separately until piping hot.
- Best served freshly cooked: The gammon has the best texture straight from the pan, while the sauce is smoothest when served soon after making.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, bring to the boil, then simmer for 12 to 15 minutes until very tender.
- Meanwhile, finely chop the parsley and cut the lemon in half. Pat the gammon steaks dry and season both sides with a little of the black pepper.
- Heat a large frying pan over medium-high heat and add 10 g of the butter. Pan-fry the gammon for 2 to 3 minutes per side until golden and heated through, then transfer to a warm plate to rest.
- In a saucepan over medium heat, melt 30 g of the butter. Stir in the flour and cook for 1 minute, then gradually whisk in 300 ml of the milk until smooth.
- Simmer the sauce for 2 to 3 minutes, whisking, until thick enough to coat the back of a spoon. Stir in the parsley, squeeze in a little lemon juice to taste, and season with a pinch more black pepper if you like.
- Drain the potatoes well and return them to the pot. Add the remaining 20 g butter and remaining 50 ml milk, then mash until creamy and smooth.
- Serve the gammon steaks with the mash and spoon over the parsley sauce. Finish with an extra squeeze of lemon at the table if you like.
Recipe notes
Tips
- For the smoothest mash, drain the potatoes thoroughly, then let them steam-dry in the hot pot for 1 minute before mashing.
- Keep the parsley sauce at a gentle simmer and whisk often so it stays silky and does not catch on the base of the pan.
- If serving anyone vulnerable, make sure the gammon is piping hot all the way through before serving.
Substitutions
- Replace Fresh parsley with Fresh chives for a milder, oniony finish.
- Replace Lemon with Orange for a softer, sweeter citrus balance.
- Replace Whole milk with Low-fat milk for a lighter sauce and mash.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate in airtight containers. Reheat the mash and sauce gently with a splash of Whole milk until piping hot; warm the Cured ham in a frying pan over medium heat until hot throughout.
