Kassler Pork with Sauerkraut, Juniper and Caraway
Why this recipe works
- Aromatic depth: Juniper, caraway and bay bring a traditional savoury fragrance that suits both the smoked pork and the sauerkraut.
- Rounded tang: Apple juice softens the sharpness of the sauerkraut while keeping its bright, appetising acidity.
- Built in one pot: Browning the pork, softening the onion and simmering everything together in the same pot creates depth with minimal cleanup.

Timing notes
- Best served hot: Serve as soon as the pork is tender and the sauerkraut is fragrant, while the meat is still juicy and the cabbage is moist.
- Mostly hands-off cooking: The active work is mainly browning, softening the onion and adding the aromatics; the final simmer does most of the flavour-building.
Ingredient notes
- Choose smoked pork loin: Kassler is already smoked and seasoned, so the dish needs little more than aromatics and black pepper to taste.
- Use juniper with restraint: Lightly crushing the berries releases their piney aroma without making the sauerkraut taste bitter or medicinal.
- Control the sauerkraut sharpness: For a softer, milder result, let the sauerkraut simmer longer; for more bite, start checking it earlier.
Texture tips
- Keep the simmer gentle: Low, steady heat helps the smoked pork stay tender rather than tightening as it cooks.
- Avoid a hard boil: Boiling can toughen the pork and make the sauerkraut dry, so add a small splash of apple juice if the pot starts to catch.
Make-ahead tips
- Good for making ahead: The sauerkraut and aromatics continue to meld after chilling, making leftovers especially flavourful the next day.
- Reheat gently: Warm in a covered pot over low heat with a splash of apple juice until piping hot, avoiding a hard boil to protect the pork’s texture.
- Freezes well: Cool fully, freeze in portions, then defrost overnight in the fridge before reheating gently.

Ingredients
Instructions
- Heat the sunflower oil in a Dutch oven over medium-high heat. Add the smoked pork loin chops and brown for 2 to 3 minutes per side, then transfer to a plate.
- Reduce the heat to medium and add the yellow onion. Cook for 5 to 6 minutes until softened and lightly golden.
- Lightly crush the juniper berries with the back of a spoon, then stir them into the pot with the caraway seeds and bay leaves. Cook for 30 seconds until fragrant.
- Add the sauerkraut and apple juice, stirring to combine and scraping up any browned bits. Nestle the pork back into the sauerkraut and bring to a gentle simmer.
- Cover and simmer on low for 45 to 50 minutes, turning the chops once, until the pork is tender and the flavours have melded. If it looks dry at any point, add a small splash of apple juice to keep it moist.
- Season with black pepper, then remove and discard the bay leaves. Serve the pork hot with the sauerkraut spooned over the top.
Recipe notes
Tips
- Keep the simmer very gentle so the pork stays juicy and tender rather than tightening.
- If you prefer a softer, milder sauerkraut, simmer for the full 50 minutes; for more bite, start checking at 40 minutes.
- Juniper berries can be strong, so crushing them lightly gives a rounded aroma without bitterness.
Substitutions
- Replace Apple juice with unsweetened apple cider for a slightly deeper, more rounded sweetness.
- Replace Sunflower oil with Olive oil for a fruitier base note.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container. Reheat gently in a covered pot over low heat with a splash of apple juice until piping hot; avoid a hard boil to keep the pork tender. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
