Ropa Vieja (Shredded Beef Stew)
Why this recipe works
- Slow braising gives the right texture: Brisket becomes tender enough to shred only after a gentle, covered simmer, giving the stew its signature strands of beef.
- Aromatics build depth: Browning the beef first, then cooking the peppers, onion, garlic, cumin and oregano creates a savoury base before the tomatoes and stock are added.
- Even better after resting: The stew holds well and the sauce thickens as it cools, making it especially useful for preparing ahead or reheating gently.

Authenticity notes
- Cuban-style character: Ropa vieja is closely associated with Cuban cooking, where shredded beef is simmered with peppers, onions and tomatoes until the sauce clings to the meat.
- Shredded, not cubed: The recognisable texture comes from pulling the beef into long strands before returning it to the sauce to finish.
- Classic serving: Rice is the natural base, with black beans or fried plantain often served alongside for a fuller meal.
Timing notes
- Mostly hands-off cooking: The active work is mainly browning, softening the vegetables and shredding the beef; the long simmer does most of the work.
- Let it settle before serving: A short rest in the pot helps the sauce thicken slightly and allows the flavours to round out.
Make-ahead tips
- Good for making ahead: The stew is well suited to cooking in advance, as the braised beef and tomato-pepper sauce develop more depth after chilling.
- Freeze in portions: Cool completely, then freeze in sealed portions so the stew can be reheated for an easy dinner later.
- Reheat gently: Warm on the hob over low heat with a little stock if needed, stirring occasionally until piping hot.
Common mistakes
- Boiling too hard: Keep the simmer gentle; aggressive boiling can make brisket tighten before it has time to become tender.
- Shredding too soon: If the beef resists the forks, return it to the pot and continue cooking until it pulls apart easily.
- Leaving the sauce too thin: After shredding, simmer uncovered until the sauce reduces enough to coat the beef rather than pooling loosely.

Ingredients
Instructions
- Pat the beef dry and season all over with the fine sea salt. Crush the black peppercorns with the side of a knife or in a mortar and pestle, then press onto the beef.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the beef well on all sides, 8 to 10 minutes in total, then transfer to a plate.
- Reduce the heat to medium and add the onion, red pepper and green pepper. Cook, stirring, for 8 to 10 minutes until softened and lightly golden.
- Add the garlic, ground cumin and dried oregano. Cook for 1 minute until fragrant.
- Stir in the canned chopped tomatoes, then pour in the beef stock and add the bay leaves. Return the beef to the pot along with any juices, bring to a gentle simmer, then cover and cook on low for 2 hours, turning the beef once, until very tender.
- Transfer the beef to a board and shred into long strands using two forks. Return the shredded beef to the pot and simmer uncovered for 15 to 20 minutes until the sauce thickens slightly and coats the meat; remove the bay leaves before serving.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle; a hard boil can make brisket tighten and take longer to become tender.
- If the sauce looks thin after shredding, simmer uncovered a little longer so it reduces and clings to the beef.
- For best results, cool the stew in the pot for 20 minutes before serving so the flavours settle and the sauce thickens slightly.
Substitutions
- Replace Beef brisket with Beef chuck roast for a slightly richer, more marbled stew.
- Replace Canned chopped tomatoes with Canned crushed tomatoes for a smoother sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently on the hob with a splash of beef stock until piping hot. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
