Zuppa di Pesce alla Veneziana (Venetian Fish Soup)
Why this recipe works
- A savoury broth with depth: Garlic, ripe tomato, dry white wine and olive oil create a rounded base that supports the seafood rather than masking it.
- Bright but not sharp: Tomato and wine bring acidity to balance the richness of the olive oil and the natural sweetness of the seafood.
- Gentle seafood cooking: Adding the seafood at the end and keeping the soup at a low simmer helps preserve a tender texture.

Timing notes
- Serve as soon as it is ready: Seafood is at its best just after cooking, while it is tender and the broth is still hot and aromatic.
- Most of the time is in the broth: The tomato and wine base benefits from a short simmer before the seafood goes in; the seafood itself only needs a few minutes.
Common mistakes
- Boiling the seafood: Avoid a hard boil once the seafood is added, as high heat can make it tough and cloud the broth.
- Cooking it too long: Remove the soup from the heat once the seafood is just cooked through and piping hot.
- Ignoring unopened shellfish: If the mix contains mussels or clams, discard any that remain closed after cooking.
Ingredient notes
- Choose a balanced seafood mix: A mix of firm fish, squid, prawns or shellfish gives the broth more flavour and varied texture.
- Use a dry white wine: A dry wine keeps the broth clean and savoury; avoid anything noticeably sweet.
- Slice the garlic thinly: Thin slices flavour the oil quickly and are less likely to dominate the delicate seafood.
Make-ahead tips
- Make the broth ahead: The tomato and wine base can be prepared in advance, then reheated gently before adding the seafood.
- Reheat gently: Warm leftovers over a low heat until piping hot, avoiding a rapid boil to help keep the seafood tender.
- Best eaten fresh: Although leftovers can be refrigerated briefly, the texture of the seafood is best on the day it is cooked.

Instructions
- Warm the olive oil in a large pot over a medium heat. Thinly slice the garlic and cook for 30 to 60 seconds until fragrant but not coloured, then stir in the chilli flakes.
- Roughly chop the tomatoes and add them to the pot with the salt and black pepper. Cook for 6 to 8 minutes, stirring now and then, until the tomatoes soften and start to break down.
- Pour in the white wine and let it bubble for 2 minutes. Add the water, bring to a gentle simmer, then cook for 12 to 15 minutes until the broth tastes rounded and slightly thickened.
- Add the seafood mix and keep the heat low so the soup barely simmers. Cook for 4 to 7 minutes, stirring once or twice, until the seafood is just cooked through and tender.
- Meanwhile, toast the bread until crisp and golden. Finely chop the parsley and stir most of it into the soup, then taste and adjust seasoning if needed.
- Ladle the soup into bowls and finish with the remaining parsley. Serve straight away with the toasted bread for dipping.
Recipe notes
Tips
- Keep the soup at a gentle simmer once the seafood goes in; a hard boil can make it tough and cause it to shed too much liquid into the broth.
- If your seafood mix includes mussels or clams, discard any that do not open during cooking.
- Seafood should be cooked until piping hot; this is especially important for anyone who is pregnant, elderly, or immunocompromised.
Substitutions
- Replace Tuscan country bread with baguette for a crisper toast.
- Replace Fresh flat-leaf parsley with Fresh basil for a softer, sweeter herbal finish.
- Replace Chili flakes with Smoked paprika for warmth without heat.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat until piping hot, avoiding a rapid boil to keep the seafood tender.
