Tostadas de Tinga con Aguacate (Chicken Tinga Tostadas)
Why this recipe works
- Smoky depth: Tomato, softened onion and chipotle sauce create a savoury base that coats the shredded chicken rather than sitting separately.
- Crisp contrast: The saucy tinga is served on crunchy tostada shells, with lettuce and avocado adding freshness and softness.
- Easy to prepare ahead: The chicken tinga can be cooked, stored and reheated separately, then assembled with fresh toppings just before serving.

Adjust the heat
- For less heat: Use less chipotle sauce and let the tomato and onion carry more of the flavour.
- For more heat: Add extra chipotle sauce gradually as the chicken simmers, tasting before adding more.
- Keep it balanced: Avocado, crema and lime help soften the smokiness and keep the tostadas fresh rather than heavy.
Make-ahead tips
- Cook the tinga ahead: Prepare the chicken tinga in advance and keep it chilled until needed.
- Keep toppings separate: Store the tinga apart from the tostada shells, lettuce, avocado and crema so everything stays fresh and crisp.
- Reheat gently: Warm the tinga in a frying pan over a low heat until piping hot, adding a splash of water if the sauce has thickened too much.
Texture tips
- Assemble at the last moment: Spoon the hot tinga onto the tostada shells just before serving to preserve their crunch.
- Keep the chicken moist: Chicken thighs stay tender during simmering, but the sauce should remain spoonable rather than dry.
Ingredient swaps
- Use chicken breast: Chicken breast can replace thighs for a leaner tinga; simmer gently and shred as soon as it is cooked through.
- Swap the crema: Sour cream gives a similar tangy richness if Mexican crema is unavailable.

Ingredients
Instructions
- Slice the onion thinly. Roughly chop the tomatoes. Shred the romaine lettuce and set aside.
- Heat the vegetable oil in a large frying pan over a medium heat. Add the onion and cook for 6 to 8 minutes until softened and lightly golden.
- Stir in the tomatoes and cook for 3 to 4 minutes until they start to break down. Add the chipotle sauce and stir well.
- Add the chicken thighs and turn them in the sauce. Reduce the heat to low, cover, and simmer for 15 to 18 minutes until the chicken is cooked through and the sauce is rich and spoonable.
- Transfer the chicken to a board and shred it using two forks, then return it to the pan. Simmer uncovered for 2 to 4 minutes, stirring, until the tinga clings to the chicken.
- Halve and stone the avocados, then slice or mash the flesh. Cut the limes into wedges.
- Arrange the tostada shells on plates. Spoon on the chicken tinga, then top with romaine lettuce, avocado and a drizzle of mexican crema. Finish with a squeeze of lime and serve straight away.
Recipe notes
Tips
- If the sauce looks dry before the chicken is cooked, add a small splash of water and keep simmering until the chicken is tender and the sauce is spoonable.
- For the best crunch, assemble the tostadas just before serving so the shells stay crisp.
Substitutions
- Replace mexican crema with sour cream for a similar tang and richness.
- Replace chicken thighs with chicken breast for a leaner tinga; simmer gently and shred as soon as it is cooked through to keep it juicy.
Storage
- Refrigerate up to 3 days
- Store the chicken tinga in an airtight container in the fridge. Reheat in a frying pan over a low heat until piping hot, then assemble with fresh tostada shells, lettuce, avocado and crema. Freeze the tinga only (not the toppings) for up to 2 months and defrost overnight in the fridge before reheating.
