Salt and Pepper Squid (Crispy Squid with Spices)
Why this recipe works
- Light, crisp coating: Cornflour forms a delicate crust that fries quickly and keeps the squid from feeling heavy.
- Fragrant pepper heat: Crushed peppercorns, white pepper, chilli and garlic give the dish its signature savoury bite.
- Fast cooking: Squid needs only a brief fry, so the centre stays tender while the outside turns crisp.

Texture tips
- Dry the squid well: Blotting away surface moisture helps the cornflour cling evenly and prevents the coating from turning pasty.
- Cook in short batches: Fry just until pale golden and crisp; squid toughens quickly if left in the oil too long.
- Serve straight away: The coating softens as it sits, especially after being tossed with soy sauce and sesame oil.
Adjust the heat
- For less heat: Use less chilli and keep the focus on white pepper and garlic for a gentler finish.
- For more heat: Add extra sliced chilli or leave in more seeds if you want a sharper, hotter toss.
- Keep the pepper fragrant: Use coarsely crushed peppercorns rather than a fine powder for aroma without harshness.
Common mistakes
- Overloading the wok: Fry in batches so the oil stays hot and the squid crisps instead of steaming.
- Browning the garlic: Keep the aromatics moving and stop once fragrant; browned garlic can make the final dish taste bitter.
- Tossing too early: Only return the squid to the wok once the aromatics are ready, then toss briefly and serve immediately.
Serving ideas
- Serve with rice: Plain steamed rice works well alongside the salty, peppery coating and savoury soy finish.
- Add freshness: Finish with extra spring onion greens for colour and a clean onion bite.
- Pair with a crisp beer: A cold lager or pilsner suits the fried coating, chilli and sesame aroma.

Ingredients
Instructions
- Pat the squid very dry with kitchen paper, then cut the tubes into rings and score any larger pieces lightly in a criss-cross pattern. Toss with 0.5 tsp of the fine sea salt and set aside for 5 minutes while you prepare the aromatics.
- Peel and thinly slice the garlic. Thinly slice the red chili pepper and spring onions, keeping the white and green parts separate.
- In a mixing bowl, combine the cornflour with the black peppercorns (crushed or very coarsely ground), the white pepper, and the remaining 0.5 tsp fine sea salt. Add the squid and toss until every piece is lightly but evenly coated, then shake off any excess.
- Heat the peanut oil in a wok or large frying pan to 180°C (355°F). Fry the squid in 2 to 3 batches for 60 to 90 seconds, just until pale golden and crisp, then lift out with a sieve and drain briefly.
- Carefully pour off the frying oil, leaving about 1 tbsp in the wok. Set the wok over medium-high heat, add the garlic, chilli and the white parts of the spring onion, and stir-fry for 30 to 45 seconds until fragrant but not browned.
- Return the squid to the wok and toss briskly for 30 seconds. Add the light soy sauce and toasted sesame oil, then toss for another 30 seconds until the squid is evenly seasoned; finish with the green parts of the spring onion and serve straight away.
Recipe notes
Tips
- Dry squid is the key to a crisp coating, so take a moment to blot it well before dusting with cornflour.
- Keep the garlic moving and stop as soon as it smells fragrant; if it browns, the finish will taste bitter.
- For best crunch, serve immediately after tossing, as the coating softens as it sits.
Substitutions
- Replace peanut oil with vegetable oil for frying.
- Replace light soy sauce with dark soy sauce for a deeper colour and slightly sweeter flavour.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If you have leftovers, cool quickly and refrigerate; reheat on a hot tray in a 220°C (430°F) oven for 6 to 8 minutes until piping hot, though the coating will not be as crisp.
