Air Fryer Blueberry Scones
Why this recipe works
- Fast air-fryer bake: The air fryer gives the scones a short, efficient cook while still producing a risen, golden finish.
- Tender crumb, golden top: Cold butter rubbed into the flour helps create a light interior, while a milk-brushed surface browns neatly.
- Easy flavour swaps: Blueberries and lemon can be varied with other soft berries or citrus for a different fruit-led finish.

Timing notes
- Let them settle briefly: A 5-minute rest after air frying helps the crumb firm slightly and makes the scones easier to handle.
- Warm or fully cooled: Serve warm for the softest crumb, or cool completely if you prefer a firmer texture for storing or packing.
Ingredient notes
- Keep the butter cold: Cold butter creates small pockets in the dough, helping the scones bake up lighter rather than dense.
- Use unwaxed lemon: Because the zest goes directly into the dough, an unwaxed lemon gives a cleaner citrus flavour.
- Handle juicy berries carefully: Very soft or juicy blueberries can stain and loosen the dough, so keeping them chilled makes shaping neater.
Common mistakes
- Do not overwork the dough: Stop mixing once the dough looks shaggy; working it until smooth can make the scones tougher.
- Leave room to rise: Arrange the wedges with space around them so the air can circulate and the sides do not stick together.
Make-ahead tips
- Freeze once cooled: Cool the scones completely, then freeze in a sealed container for up to 2 months.
- Refresh in the air fryer: Warm stored scones at 160°C (320°F) for 2 to 4 minutes, or reheat from frozen at 160°C (320°F) for 5 to 7 minutes until hot throughout.

Ingredients
Instructions
- Preheat the air fryer to 180°C (355°F) for 3 minutes. If your basket is small, plan to cook the scones in batches so they do not touch.
- In a large bowl, whisk together the plain flour, baking powder and caster sugar. Finely zest the lemon into the bowl and whisk again.
- Rub the cold unsalted butter into the flour mixture with your fingertips until it looks like fine crumbs with a few pea-sized bits. This helps the scones bake up tender and light.
- Add the blueberry and toss gently to coat in the crumbs. Pour in most of the whole milk, keeping a little back for brushing, then mix with a spatula just until a shaggy dough forms.
- Tip the dough onto a lightly floured surface and pat it into a 2.5 cm thick round. Fold it over once or twice to bring it together, then pat back to the same thickness.
- Cut into 8 wedges. Brush the tops lightly with the reserved whole milk.
- Arrange the scones in a single layer in the air fryer basket, leaving space for them to rise. Air fry for 10 to 12 minutes until well risen and golden, turning the basket once if your air fryer cooks unevenly.
- Cool for 5 minutes before serving warm, or cool completely for a firmer crumb. If cooking in batches, keep the first batch warm in a low oven while you finish the rest.
Recipe notes
Tips
- Handle the dough as little as possible once the milk goes in; overworking makes scones tougher.
- If blueberries are very juicy, chill them briefly before mixing so the dough stays neat and rises well.
Substitutions
- Replace Blueberry with Raspberry for a softer, jammy centre.
- Replace Lemon with Orange for a sweeter citrus note.
Storage
- Refrigerate up to 2 days
- Cool completely, then store airtight. To refresh, warm in the air fryer at 160°C (320°F) for 2 to 4 minutes. Freeze in a sealed container for up to 2 months and reheat from frozen at 160°C (320°F) for 5 to 7 minutes until hot throughout.
