Air Fryer Bruschetta
Why this recipe works
- Fast to prepare: The air fryer crisps the bread quickly, making this a useful last-minute appetiser.
- Crisp and juicy: Warm garlic-rubbed toast contrasts with the fresh tomato and basil topping.
- Bright finish: Balsamic vinegar adds tang and sweetness, balancing the olive oil and ripe tomatoes.

Texture tips
- Keep the toast crisp: Top the bread just before serving so the tomato juices do not soak into the toast.
- For extra crunch: Let the air-fried bread cool briefly on a rack rather than stacking it, which can trap steam.
Ingredient notes
- Use ripe tomatoes: Ripe tomatoes give the topping its sweetness and juiciness; if they are watery, spoon off a little liquid before assembling.
- Choose good olive oil: Because the oil is used as a finishing flavour, extra-virgin olive oil makes a noticeable difference.
- Use fresh basil: Fresh basil gives the topping its clean herbal aroma; dried basil will not provide the same brightness.
Make-ahead tips
- Prepare components separately: The tomato topping can be refrigerated ahead, but keep it separate from the toasts until serving.
- Re-crisp leftover toasts: Re-crisp plain toasts in the air fryer at 180°C (355°F) before adding the tomato topping.
Authenticity notes
- Air fryer adaptation: Traditional bruschetta is usually grilled or toasted; the air fryer provides a quick, even way to crisp the bread.
- Classic topping: Tomato, basil, garlic and olive oil are a familiar Italian-style combination for bruschetta, especially when served as an antipasto.

Instructions
- Slice the baguette into pieces about 1.5 to 2 cm thick. Brush one side lightly with a little of the olive oil.
- Heat the air fryer to 190°C (375°F). Air-fry the bread in a single layer for 3 to 5 minutes until crisp and pale golden, turning once if needed.
- Cut the garlic clove in half. Rub the cut side over the warm toasts for a light garlic flavour.
- Dice the tomato and place in a bowl. Tear in the basil, then season with the salt and pepper and stir in most of the remaining olive oil.
- Spoon the tomato mixture over the toasts. Drizzle with the balsamic vinegar and the last of the olive oil, then serve straight away while the bread is still crisp.
Recipe notes
Tips
- For the crispest bruschetta, keep the tomato mixture ready in the bowl and top the bread only just before serving.
- If your tomatoes are very juicy, spoon off a little liquid before topping so the bread stays crisp.
Substitutions
- Replace Balsamic vinegar with White wine vinegar for a brighter, cleaner finish.
Storage
- Refrigerate up to 1 days
- Store the tomato topping in an airtight container in the fridge for up to 1 day. Keep any leftover toasts at room temperature in a sealed container and re-crisp in the air fryer at 180°C (355°F) for 2 minutes, then top just before serving.
