Pimientos del Piquillo Rellenos de Atún (Tuna-Stuffed Piquillo Peppers)
Why this recipe works
- Balanced acidity: Sherry vinegar lifts the tuna and tomato mixture without overwhelming the sweetness of the peppers.
- Fast but composed: Canned tuna and roasted peppers keep the cooking time short while still giving the dish a finished, sauced presentation.
- Flexible serving: The peppers can be served as a light lunch, starter or tapas-style plate with bread for the tomato sauce.

Ingredient notes
- Choose whole peppers: Use intact roasted peppers where possible, as split or torn peppers are harder to fill neatly.
- Drain the tuna well: Removing excess liquid keeps the filling compact and prevents the sauce from becoming watery.
- Adjust the vinegar carefully: Sherry vinegar should brighten the filling and sauce; add more only gradually after tasting.
Texture tips
- Keep the filling firm: Cook the onion and tomato mixture until thickened before folding in the tuna, so the peppers hold their shape.
- Warm gently: Use low heat once the peppers are filled; vigorous simmering can split the peppers and dry out the tuna.
- Silkier sauce: A little extra olive oil at the end gives the tomato sauce a smoother, rounder finish.
Make-ahead tips
- Prepare in advance: The stuffed peppers can be assembled ahead and kept with the sauce in the fridge for up to 2 days.
- Reheat gently: Warm in a saucepan over a low heat until piping hot throughout, loosening the sauce with a small splash of water if needed.
- Best texture: For the neatest presentation, serve the peppers the same day they are filled, while the peppers are still firm enough to handle.
Authenticity notes
- Tuna filling: Tuna is a common, practical filling for piquillo peppers, often paired with tomato, onion and olive oil.
- Serve with bread: Crusty bread is a natural pairing for spooning up the tomato sauce and olive oil.

Ingredients
Instructions
- Finely dice the onion. Drain the tuna well, and gently drain the roasted red peppers, keeping them whole if possible.
- Warm 1 tbsp of the olive oil in a frying pan over a medium heat. Add the onion and cook for 6 to 8 minutes until soft and sweet, without letting it brown.
- Add about a third of the chopped tomatoes to the onion and cook for 3 to 4 minutes until thickened. Tip into a mixing bowl and leave to cool for 2 minutes, then fold in the tuna and 1 tsp of the sherry vinegar.
- Spoon the tuna mixture into the peppers, filling them neatly without tearing. Set the stuffed peppers on a plate while you make the sauce.
- Tip the remaining chopped tomatoes into a saucepan with the remaining 1 tsp sherry vinegar and 1 tbsp olive oil. Simmer for 5 minutes until lightly thickened, then taste and adjust with a little more olive oil if you want it silkier.
- Nestle the stuffed peppers into the sauce and warm gently over a low heat for 3 to 4 minutes, turning once, until heated through. Serve with the sauce spooned over and the remaining 1 tbsp olive oil drizzled on top.
Recipe notes
Tips
- Handle the peppers gently and use a teaspoon to fill them, as piquillo peppers tear easily once drained.
- Keep the heat low when warming the stuffed peppers so the filling stays moist and the peppers do not split.
- If serving to anyone vulnerable, make sure the peppers and filling are heated until piping hot throughout.
Substitutions
- Replace sherry vinegar with red wine vinegar for a similar sharpness.
- Replace canned tuna with canned salmon for a richer, softer filling.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container with the sauce. Reheat gently in a saucepan over a low heat until piping hot, adding a small splash of water if the sauce has thickened too much.
