Gyeran Jjim (Korean Steamed Egg Custard)
Why this recipe works
- Soft, custardy texture: Low, steady steam sets the eggs gently, giving the custard a tender wobble rather than a firm or spongy finish.
- Quiet umami depth: Fish stock and light soy season the eggs from within, while sesame oil adds a fragrant finish without weighing the custard down.
- Fast to prepare: With a short whisking and steaming time, it delivers a warm, savoury side dish in under 30 minutes.

Ingredient notes
- Use a well-seasoned stock: Fish stock gives the custard its characteristic savoury depth; chicken stock makes a milder version with less briny flavour.
- Strain for smoothness: Passing the egg mixture through a sieve removes thicker strands of egg white and helps the custard set more evenly.
- Season with restraint: Light soy sauce and stock both add salt, so taste and adjust gently rather than making the egg mixture too salty before steaming.
Texture tips
- Keep the steam gentle: A low simmer gives a finer, silkier set; aggressive boiling can make the custard bubble and form holes.
- Stop at a slight wobble: Remove the custard once it is puffed and just set in the centre. Carryover heat will finish it without making it rubbery.
Authenticity notes
- A Korean home-style side: Gyeran jjim is commonly served hot as a soft savoury side dish rather than as a sweet custard.
- How it is served: It pairs naturally with steamed rice, kimchi and other banchan, or alongside grilled meats and stews.
Make-ahead tips
- Best eaten fresh: The custard is at its lightest and most delicate straight after steaming, while still hot.
- Reheat gently: If refrigerated, reheat by steaming over a low simmer until piping hot; high microwave heat can make the eggs rubbery.

Ingredients
Instructions
- Bring a saucepan of water to a gentle simmer and set a heatproof bowl on top so it sits securely above the water without touching it. Keep the heat low so the steam is steady, not aggressive.
- Thinly slice the spring onions, then set a small handful aside for finishing. In a bowl, whisk the eggs with the warm fish stock, light soy sauce and fine sea salt until smooth, without whipping in lots of air.
- Strain the egg mixture through a sieve into the heatproof bowl, then stir in most of the spring onion. Cover the bowl with a lid if it fits, or with foil, leaving a small gap for steam to escape.
- Steam gently for 10 to 12 minutes, checking at 10 minutes. It is ready when puffed and just set with a slight wobble in the centre; avoid overcooking or it will turn spongy.
- Remove from the heat and drizzle over the toasted sesame oil. Scatter over the reserved spring onion and the roasted sesame seeds, then serve straight away while hot.

Tips
- Keep the water at a gentle simmer and the heat low; vigorous boiling makes the custard bubble and set with holes.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, steam the custard until fully set and piping hot throughout.
Substitutions
- Replace fish stock with chicken stock for a milder, less briny custard.
- Replace light soy sauce with a slightly smaller amount of soy sauce, then add fine sea salt to taste.
Storage
- Refrigerate up to 2 days
- Cool, cover and refrigerate. Reheat gently by steaming over a low simmer until piping hot; avoid microwaving on high, which can make it rubbery.
