Makowiec (Polish Poppy Seed Roll)

Makowiec, the Polish poppy seed roll, is a sweet yeasted bake recognised by its dark, tightly spiralled filling and soft enriched dough. Often served in slices for celebrations or with coffee, it combines the nutty depth of ground poppy seeds with honey, raisins, orange zest and vanilla for a dense, fragrant centre. The dough should be supple enough to roll neatly around the cooled filling, giving each slice a clear swirl rather than a loose crumble. A simple milk icing finishes the loaf once cooled, adding sweetness without overwhelming the poppy seed flavour.

Why this recipe works

  • Classic rolled structure: The enriched dough is rolled tightly around the poppy seed filling to create makowiec’s recognisable spiral.
  • Fragrant filling: Honey, raisins, orange zest and vanilla give the poppy seed centre sweetness, fruitiness and aroma without overpowering its nutty character.
  • Good for planning ahead: The roll stores well, slices neatly once cooled and can be frozen unglazed for easier serving later.

Timing notes

  • Watch the dough, not just the clock: The first rise should leave the dough visibly doubled, while the second proof only needs it to look slightly puffy before baking.
  • Cool before filling and glazing: Let the poppy seed filling reach room temperature before spreading, and cool the baked roll completely so the glaze sets cleanly.

Ingredient notes

  • Poppy seed filling consistency: Cook the filling until thick, sticky and cohesive; if it is too loose, it can soften the dough and blur the spiral.
  • Orange flavour: Dried orange zest gives a concentrated citrus note that stands up well to the rich poppy seed filling.

Make-ahead tips

  • Make the filling in advance: The poppy seed filling can be prepared ahead, chilled, then brought back to a spreadable texture before assembling the roll.
  • Freeze unglazed slices: Freeze the baked roll in slices before glazing for the neatest finish after defrosting.
  • Refresh gently: Defrost at room temperature, then warm briefly in a 160°C (320°F) oven before cooling and glazing.

Authenticity notes

  • Traditional shape: Makowiec is typically made as a long rolled loaf rather than individual buns, giving each slice its compact poppy seed spiral.
  • Festive Polish bake: It is widely associated with Polish Christmas and Easter tables, where it is served sliced as a sweet bread or pastry.

  1. Warm the milk until just lukewarm, then stir in the caster sugar and yeast. Leave for 5 minutes until the surface looks slightly foamy.
  2. Put the flour and salt in the bowl of a stand mixer. Add the egg and the milk mixture, then mix with the dough hook on low until a shaggy dough forms.
  3. Knead on medium speed for 6 to 8 minutes until smooth and elastic. Add the butter a little at a time and continue kneading for 3 to 4 minutes until fully incorporated and the dough is glossy.
  4. Shape the dough into a ball and place in a lightly buttered bowl. Cover and leave in a warm place for 60 minutes, or until doubled in size.
  5. Meanwhile, make the filling: tip the poppy seeds into a saucepan with the milk and bring to a gentle simmer. Cook for 8 to 10 minutes, stirring often, until thick and most of the milk is absorbed.
  6. Stir in the honey, raisins, dried orange zest and vanilla, then cook for 1 to 2 minutes until sticky and cohesive. Scrape into a bowl and leave to cool to room temperature so it does not melt the dough.
  7. Line a baking tray. Tip the risen dough onto a lightly floured surface and roll into a rectangle about 30 x 40 cm, with a long edge facing you.
  8. Spread the cooled poppy seed filling evenly over the dough, leaving a 2 cm border along the far long edge. Roll up tightly from the long edge nearest you, pinching the seam to seal and tucking the ends under.
  9. Place seam-side down on the tray. Cover and prove for 30 minutes until slightly puffy; meanwhile, heat the oven to 180°C (355°F).
  10. Bake for 30 to 35 minutes until deep golden and the roll sounds hollow when tapped underneath. Cool completely on a rack before glazing so the icing sets neatly.
  11. Whisk the icing sugar with enough milk to make a thick but pourable glaze. Drizzle over the cooled makowiec and leave for 10 minutes to set before slicing.

Recipe notes

Tips

  • For a neat spiral, roll the dough firmly and keep the filling layer even, avoiding a thick ridge at the start of the roll.
  • If the top is browning too quickly, loosely cover the roll with foil for the final 10 minutes of baking.
  • This bake contains egg; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark.

Substitutions

  • Replace Raisin with Sultana for a slightly juicier, milder sweetness.
  • Replace Honey with Caster sugar, increasing the Caster sugar in the filling by 20 g and adding an extra 10 ml Whole milk to keep the filling spreadable.
  • Replace Vanilla extract with Dried orange zest for a more citrus-forward filling (use an extra 1 tsp Dried orange zest).

Storage

  • Refrigerate up to 4 days
  • Store airtight at room temperature for up to 2 days, or in the fridge for up to 4 days. Freeze slices (unglazed is best) for up to 2 months; defrost at room temperature, then refresh in a 160°C (320°F) oven for 8 to 10 minutes and glaze after cooling.
