Gratin de Légumes (French Potato and Leek Gratin)
Why this recipe works
- Creamy, tender layers: Coating the potato slices in warm cream before baking helps them cook evenly and settle into a cohesive gratin.
- Gentle savoury depth: Softened leeks, garlic and nutmeg flavour the cream without overpowering the potatoes or cheese.
- Golden gratin finish: Gruyère adds a nutty, savoury top layer that browns well and contrasts with the soft potatoes underneath.

Ingredient notes
- Choose the right potatoes: Yukon Gold potatoes are a good fit because they hold their shape while becoming tender and creamy in the oven.
- Clean the leeks thoroughly: Leeks often hold grit between their layers, so slice and rinse them well before cooking.
- Cream affects the final set: Double cream gives the richest, most stable texture; single cream makes a lighter gratin but can finish looser.
Timing notes
- Most of the time is hands-off: The active work is mainly slicing, softening the leeks and assembling the dish; the oven does the longer cooking.
- Let it stand before serving: A short rest allows the cream to settle so the gratin portions more neatly.
Common mistakes
- Boiling the cream: Keep the cream at a gentle simmer only; hard boiling can make the sauce split and turn greasy.
- Removing it too soon: Check the centre with a knife before finishing; the potatoes should be nearly tender before the cheese topping goes on.
- Serving immediately: Cutting into the gratin straight from the oven can make it slump, so give it time to set slightly.
Make-ahead tips
- Make ahead: Bake the gratin in advance, cool completely, then cover and refrigerate until needed.
- Reheat gently: Reheat in a 180°C (355°F) oven until piping hot; microwaving works, but the top will be softer.
- Best texture: The gratin is at its creamiest and the top at its crispest on the day it is baked.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Lightly butter a baking dish.
- Trim the leeks, then slice and rinse well to remove any grit. Thinly slice the garlic.
- Melt the remaining butter in a saucepan over medium heat. Add the leeks and cook for 6 to 8 minutes until softened but not browned, then stir in the garlic for 30 seconds until fragrant.
- Pour in the double cream and add the ground nutmeg, black pepper and fine sea salt. Bring just to a gentle simmer, then take off the heat.
- Peel the potatoes, then slice them very thinly (about 2 to 3 mm). Add the slices to the warm cream mixture and toss gently so they are well coated.
- Tip everything into the baking dish and press down lightly so the potatoes sit mostly under the cream. Cover the dish tightly and bake for 45 minutes, until the potatoes are nearly tender when pierced with a knife.
- Uncover, then grate the Gruyère over the top. Bake for 12 to 15 minutes until bubbling and deeply golden on top.
- Leave the gratin to stand for 8 to 10 minutes so it sets slightly and slices more neatly. Serve hot.
Recipe notes
Tips
- Slice the potatoes evenly so they cook at the same rate; a mandoline makes this quick and consistent.
- Keep the cream at a gentle simmer only; boiling can cause it to split and turn greasy.
- If the top browns before the potatoes are fully tender, cover loosely and continue baking until a knife slides in easily.
Substitutions
- Replace Gruyère cheese with Emmental cheese for a milder, nuttier finish.
- Replace double cream with single cream for a lighter gratin, but expect a looser set.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or microwave in short bursts; the top will be less crisp if microwaved.
