Lentil Mujaddara Bowl with Basmati Rice and Caramelised Onions

Mujaddara is a much-loved Middle Eastern lentil and rice dish, recognised for its savoury depth and generous topping of slow-cooked onions. In bowl form, it becomes a practical lunch built around tender brown lentils, fluffy basmati rice and jammy caramelised onions scented with cumin and coriander. Lemon and extra-virgin olive oil keep the finish bright rather than heavy, while parsley adds a fresh herbal lift. It is satisfying warm, but also holds its texture well at room temperature, making it especially useful for make-ahead lunches.

Why this recipe works

  • Slow-built flavour: Caramelising the onions properly gives the bowl its sweet, savoury depth, while cumin and coriander add warmth without making it heavy.
  • Bright finish: Lemon juice and extra-virgin olive oil cut through the earthiness of the lentils and rice, keeping the finished bowl fresh.
  • Good for lunches: The lentils, rice and onions hold well in the fridge, and the dish can be served warm or at room temperature.

Timing notes

  • Most of the time is hands-off: The active work is mainly slicing onions, rinsing grains and making the dressing; the rest is gentle cooking and draining.
  • Flexible serving temperature: Serve the bowl warm after cooking, or let it cool to room temperature for packed lunches.

Ingredient notes

  • Use lentils that hold their shape: Brown lentils are a good choice because they become tender without collapsing into the rice.
  • Slice the onions thinly: Thin, even slices cook down more evenly and develop the jammy texture that defines mujaddara.
  • Adjust the lemon at the end: Add more lemon juice only after tasting, as the dressing should brighten the dish rather than dominate it.

Common mistakes

  • Rushing the onions: High heat can brown the edges before the onions soften properly. Keep the heat moderate and lower it if they start to catch.
  • Letting the lentils go too soft: Cook the lentils just until tender so they keep their shape when combined with the rice.
  • Sealing while hot: Cool the lentils, rice and onions before closing containers so steam does not make the grains heavy or damp.

Make-ahead tips

  • Pack for several lunches: Portion the lentils, rice and onions into airtight containers and refrigerate for up to 4 days.
  • Refresh after reheating: Reheat the lentils and rice gently until piping hot, then add the lemon dressing and parsley just before serving.

  1. Rinse the brown lentils and basmati rice separately under cold water until the water runs clearer. Thinly slice the yellow onion. Finely chop the fresh parsley and set aside.
  2. Cook the lentils in a saucepan of gently boiling water for 18 to 22 minutes until tender but still holding their shape. Drain well in a colander and return to the saucepan off the heat. Season with a pinch of the fine sea salt and a little black pepper.
  3. In the same saucepan, cook the basmati rice in gently boiling water for 10 to 12 minutes until just tender. Drain thoroughly and return to the pan; cover and leave to steam for 5 minutes. Fluff with a wooden spoon.
  4. Meanwhile, heat 3 tbsp of the extra virgin olive oil in a large frying pan over medium heat. Add the onion with a pinch of the fine sea salt and cook, stirring often, for 18 to 22 minutes until deeply caramelised and jammy; lower the heat if it starts to catch. Stir in the ground cumin and ground coriander for 30 seconds until fragrant.
  5. Make the dressing in a mixing bowl by squeezing in the lemon juice, then whisking in the remaining 2 tbsp extra virgin olive oil with the remaining fine sea salt and black pepper. Taste and adjust with a little more lemon juice if you like it sharper. Keep it bright and simple.
  6. Combine the lentils and rice, then divide between two containers or bowls. Spoon the caramelised onions over the top and drizzle with the lemon dressing. Finish with the fresh parsley, and eat warm or at room temperature.

Recipe notes

Tips

  • For the best flavour, take the onions slowly over medium to medium-low heat until they turn a deep golden brown; rushing them will give sweetness without the same depth.
  • If you are meal prepping, cool the lentils, rice and onions before sealing the containers so they stay fluffy rather than steamy.
  • If serving warm, reheat the lentils and rice first, then add the dressing and parsley at the end to keep the flavours fresh.

Substitutions

  • Replace fresh parsley with fresh mint for a different, but still classic, herbal finish.
  • Replace ground coriander with ground cumin for a more cumin-forward bowl.

Storage

  • Refrigerate up to 4 days
  • Store in airtight containers in the fridge for up to 4 days. Eat at room temperature, or reheat gently in the microwave until piping hot, then add the lemon dressing and fresh parsley.
