Lasagna Bianca delle Feste (White Lasagne with Pork and Porcini)
Why this recipe works
- Deep savoury filling: Pork, mushrooms and reduced white wine create a rich base that gives the lasagne depth without needing tomato.
- Creamy, sliceable layers: Béchamel spreads through the pasta sheets, keeping the bake moist while helping the layers set neatly after resting.
- Built for sharing: The whole dish bakes together and can be brought to the table, making it well suited to festive meals or family-style serving.

Common mistakes
- Leaving the filling too wet: Reduce the wine until the pork and mushroom mixture looks glossy and the pan is almost dry; excess liquid can make the lasagne watery.
- Using béchamel that is too stiff: The sauce should coat a spoon but still spread easily. If it tightens before assembly, loosen it gradually with warm milk.
- Slicing too soon: Rest the lasagne for 10 minutes before cutting so the béchamel and filling settle into clean layers.
Ingredient notes
- Mushroom depth: Porcini bring the most distinctive woodsy note, but the key is browning the mushrooms well so their moisture cooks off and their flavour concentrates.
- Cheese choice: Parmesan adds salinity and helps the top brown; Grana Padano gives a slightly milder, sweeter finish.
- Wine balance: Dry white wine cuts through the richness of the pork and béchamel. For an alcohol-free version, milk can be used, but reduce it briefly so the filling stays concentrated.
Make-ahead tips
- Assemble ahead: The lasagne can be assembled earlier, covered and chilled, then baked when needed. Allow enough extra time for the centre to become piping hot.
- Freeze in portions: Cool completely before freezing. Portioning makes reheating easier and helps preserve neat slices.
- Reheat gently: Defrost overnight in the fridge, then reheat at 180°C (355°F) until piping hot throughout.
Authenticity notes
- White lasagne style: Lasagne bianche are tomato-free Italian lasagne that rely on besciamella for richness rather than a red tomato ragù.
- Festive home cooking: This version sits firmly in the generous home-style tradition: rich filling, creamy sauce and a deeply golden baked top.
- Serve from the dish: Once rested, it is designed to be sliced and served from the baking dish at the table.

Instructions
- Heat the oven to 190°C (375°F). Finely chop the onion, crush the garlic, and slice the mushrooms.
- Make the béchamel: warm the milk in a saucepan until steaming but not boiling. In a second saucepan, melt 70 g butter over medium heat, stir in the flour, and cook for 2 minutes until it smells biscuity but has not coloured.
- Whisk in the warm milk a little at a time until smooth, then simmer gently for 6 to 8 minutes, whisking often, until thick enough to coat the back of a spoon. Season with 1 tsp fine sea salt and 0.5 tsp black pepper, then take off the heat.
- Melt 30 g butter in a large frying pan over medium-high heat. Add the onion with a pinch of the salt and cook for 6 to 8 minutes until soft and lightly golden, then stir in the garlic for 30 seconds.
- Add the mushrooms and cook for 8 to 10 minutes until their liquid has evaporated and they are starting to brown. Stir in the remaining 1 tsp fine sea salt and 0.5 tsp black pepper.
- Add the minced pork and cook for 6 to 8 minutes, breaking it up, until no pink remains. Pour in the wine and simmer for 3 to 4 minutes until reduced and glossy.
- Assemble: spread a thin layer of béchamel in the base of a baking dish. Add a layer of lasagne noodles, then a third of the pork and mushroom mixture, a ladle of béchamel, and a scattering of Parmesan; repeat to make 3 layers, finishing with béchamel and the remaining Parmesan on top.
- Bake for 35 to 40 minutes until bubbling at the edges and deeply golden on top. Rest for 10 minutes before slicing so the layers set neatly.
Recipe notes
Tips
- If the béchamel thickens too much before layering, whisk in a splash of warm milk to loosen it; it should spread easily but still coat a spoon.
- For the best texture, reduce the wine until the pan looks almost dry and the pork mixture is glossy; this prevents a watery lasagne.
- Food safety: this dish contains pork, so cook the filling until no pink remains and reheat leftovers until piping hot.
Substitutions
- Replace Dry White Wine with the same amount of Whole milk for an alcohol-free version; reduce for 1 to 2 minutes longer to concentrate the flavour.
- Replace Parmesan with Grana Padano cheese for a slightly milder, sweeter finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Freeze portions well wrapped for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot throughout.
