Cannoli
Why this recipe works
- Blistered, crisp shells: Rolling the dough very thin and frying it steadily gives the pastry its light, crisp structure.
- Smooth ricotta filling: Draining wet ricotta and briefly chilling the filling helps it pipe neatly into the cooled shells.
- Balanced sweetness: Vanilla, dried orange zest and dark chocolate keep the sweet ricotta filling aromatic rather than overly sugary.
- Classic shaping: Wrapping the dough around cannoli forms creates the recognisable tube shape and hollow centre for filling.

Authenticity notes
- Sicilian pastry style: Cannoli are strongly associated with Sicilian pastry-making, defined by a fried shell and sweet ricotta filling rather than a baked case.
- Fried on forms: The dough is wrapped around metal forms before frying, which gives cannoli their hollow shape and crisp, blistered surface.
Ingredient notes
- Choose thick ricotta: Use ricotta that is creamy but not watery; drain it if needed so the filling stays smooth and pipeable.
- Marsala in the dough: Marsala adds depth to the shell dough, while water gives a simpler alcohol-free version.
- Chocolate chip size: Mini chocolate chips distribute more evenly through the filling than larger chips.
Make-ahead tips
- Prepare components separately: The shells and ricotta filling can be made ahead and stored separately for up to 2 days.
- Refresh the shells: Stored shells can be refreshed briefly at 160°C (320°F), then cooled completely before filling.
- Fill at the last moment: Pipe the ricotta into the shells just before serving to preserve the crisp texture.
Common mistakes
- Letting the oil drift: Oil that is too cool makes the shells greasy; too hot and they brown before blistering. Keep it close to 175°C (345°F).
- Rolling too thick: Dough that is not rolled thin enough fries heavy rather than crisp.
- Removing shells too early: Pale shells will not have the same snap, so fry until evenly deep golden before draining.

Instructions
- Make the shell dough: put the plain flour, caster sugar, cocoa powder (if using) and fine sea salt in a bowl. Rub in the unsalted butter until sandy, then mix in the egg and marsala wine to form a shaggy dough, adding the water a little at a time until it comes together. Knead for 5 minutes until smooth and elastic.
- Wrap the dough and chill for 45 minutes to relax the gluten. While it chills, set out cannoli forms and prepare a lightly floured work surface. If your ricotta seems wet, drain it in a sieve set over a bowl until thick.
- Roll the dough very thin, about 1 mm, using a rolling pin. Cut into 10 to 12 cm circles, then wrap each circle around a cannoli form, brushing the seam with a little beaten egg (use a small dab taken from the shell dough egg if needed) and pressing firmly to seal. Keep the formed shells covered as you work so they do not dry out.
- Heat the sunflower oil in a large pot to 175°C (350°F). Fry the shells in batches for 2 to 3 minutes, turning, until blistered and deep golden. Lift out with tongs and drain, then cool for 5 minutes before sliding off the forms carefully.
- Make the filling: in a bowl, mix the ricotta, icing sugar, vanilla extract and dried orange zest until smooth and glossy. Fold in the dark chocolate chips. Chill the filling for 10 minutes so it pipes neatly.
- Pipe the filling into the cooled shells from both ends, filling right to the centre. Serve straight away for the crispest shells, with a light extra dusting of icing sugar if you like. If holding briefly, keep shells and filling separate until just before serving.
Recipe notes
Tips
- For the crispest cannoli, fill the shells right before serving as the ricotta will soften them over time.
- Use a thermometer and keep the oil close to 175°C (350°F); cooler oil makes greasy shells, hotter oil browns them before they blister properly.
- If serving children, omit the marsala wine and replace it with water in the shells; the flavour will be simpler but still delicious.
Substitutions
- Replace Marsala wine with water in the shell dough for an alcohol-free version.
- Replace Dark chocolate chips with mini chocolate chips for a more even distribution through the filling.
- Replace Vanilla extract with vanilla bean paste for a stronger vanilla flavour.
Storage
- Refrigerate up to 2 days
- Store the ricotta filling in an airtight container in the fridge for up to 2 days. Keep shells at room temperature in a sealed container for up to 2 days, then refresh in a 160°C (320°F) oven for 4 to 5 minutes and cool completely before filling.
