Callos Madrileños (Madrid-Style Tripe Stew)
Why this recipe works
- Gentle simmering: A long, low simmer gives the tripe time to become tender while the stock reduces into a fuller, more cohesive sauce.
- Deep savoury base: Softened onion, garlic, smoked paprika, bay, chorizo and morcilla build a smoky, meaty flavour without needing a long ingredient list.
- Rich, hearty finish: The sausages enrich the broth as they cook, creating a glossy sauce that clings to the tripe and makes the stew feel substantial.

Timing notes
- Mostly hands-off cooking: The active work is mainly chopping and starting the base; the flavour and texture develop during the long covered simmer.
- Rest before serving: A short rest off the heat helps the sauce settle and gives the tripe time to absorb more of the broth.
Authenticity notes
- Madrid-style character: Callos Madrileños is defined by tripe cooked with Spanish cured sausages, especially chorizo and morcilla, in a smoky paprika-rich sauce.
- Serve with bread: Crusty bread is the natural accompaniment, as the sauce is one of the key pleasures of the dish.
Texture tips
- Keep the simmer gentle: A steady, low simmer helps the tripe soften without toughening or breaking down unevenly.
- Add morcilla near the end: Morcilla is more delicate than chorizo, so adding it late keeps the slices intact and prevents the sauce from becoming heavy.
Make-ahead tips
- Improves after resting: Like many stews, the flavour becomes rounder after a night in the fridge, making it well suited to preparing ahead.
- Reheat gently: Warm slowly in a saucepan, adding a little stock if the sauce has thickened too much, until piping hot throughout.
- Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge and reheat gently to preserve the texture.

Ingredients
Instructions
- Rinse the tripe well under cold running water, then cut it into bite-sized pieces. Slice the chorizo and morcilla into thick rounds. Finely chop the onion and thinly slice the garlic.
- Heat the olive oil in a Dutch oven over medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes until soft and lightly golden, stirring often. Stir in the garlic and cook for 1 minute until fragrant.
- Take the pan off the heat and stir in the smoked paprika so it blooms without burning. Tip in the tripe, bay leaves and beef stock, then bring to a gentle simmer. Cover and cook on low for 1 hour 30 minutes, stirring occasionally, until the tripe is tender.
- Add the chorizo and simmer, uncovered, for 20 minutes so the sauce reduces and turns glossy. Add the morcilla and cook for 10 minutes more, keeping the heat low so it stays in pieces. Season with the remaining salt and the black pepper, then rest off the heat for 5 minutes before serving piping hot.
Recipe notes
Tips
- Keep the stew at a gentle simmer rather than a rapid boil so the tripe turns tender and the sauce thickens naturally.
- If the sauce reduces too quickly, add a splash more beef stock and continue simmering until it coats the tripe.
- If serving vulnerable groups, ensure the stew is piping hot throughout and the sausages are thoroughly heated.
Substitutions
- Replace Extra virgin olive oil with Light olive oil for a slightly milder base.
- Replace Yellow onion with White onion for a sweeter, softer onion flavour.
- Replace Beef stock with Chicken stock for a lighter, less beefy sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, adding a splash of beef stock if needed, until piping hot. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
