Involtini di Manzo (Stuffed Beef Rolls in Tomato Sauce)
Why this recipe works
- Layered savoury flavour: Browning the beef rolls first creates depth, while pancetta, garlic and parsley season the meat from the inside.
- Gentle braising: A slow simmer in tomato passata helps the thin beef rolls become tender without drying out.
- Reheats well: The rolls stay moist in the sauce, making the dish well suited to cooking ahead and reheating gently.

Ingredient notes
- Choose thin beef slices: The beef should be thin enough to roll easily; thicker slices are more likely to unroll or turn tough.
- Use good passata: Because the sauce is simple, a smooth, well-flavoured tomato passata makes a noticeable difference.
- Mind the saltiness: Pancetta, Parmesan and Pecorino can all be salty, so taste the sauce before adding the final seasoning.
Texture tips
- Keep the simmer gentle: A low, steady simmer gives the beef time to soften while the sauce reduces gradually.
- Avoid rapid boiling: Boiling the sauce hard can tighten the meat and make the rolls less tender.
Make-ahead tips
- Cook ahead if needed: The finished involtini can be cooled and refrigerated in their sauce, then reheated gently before serving.
- Freeze with the sauce: Freeze the cooked rolls covered in sauce so the beef stays protected and moist as it defrosts.
- Reheat slowly: Warm in a covered pan over a low heat, adding a little water if the sauce has thickened too much.
Serving ideas
- Serve with something to catch the sauce: Polenta, mashed potatoes, pasta or crusty bread all work well with the rich tomato sauce.
- Finish simply: A little grated Parmesan and fresh parsley add savoury depth and freshness just before serving.

Ingredients
Instructions
- Finely chop the parsley and crush the garlic. Cut the pancetta into thin strips so it tucks neatly inside the rolls.
- Lay the beef slices out and season with most of the salt and pepper. Add a little pancetta, a pinch of parsley and a little garlic to each slice, then roll up tightly and press the seam to help it hold.
- Heat the olive oil in a large frying pan over a medium-high heat. Add the beef rolls seam-side down and brown all over for 6 to 8 minutes, turning with tongs until well coloured.
- Pour in the tomato passata and stir, scraping up any browned bits from the pan. Bring to a gentle simmer, then reduce the heat to low, cover and cook for 55 to 60 minutes, turning the rolls once or twice, until the beef is tender and the sauce is thick enough to coat.
- Taste the sauce and adjust with the remaining salt and pepper if needed. Serve the involtini with the sauce spooned over, finished with grated parmesan and the remaining parsley.
Recipe notes
Tips
- If the beef slices are not very thin, place them between two sheets of baking paper and gently bash with a rolling pin until they roll easily.
- Keep the sauce at a gentle simmer rather than a rapid boil so the rolls stay tender and the sauce reduces slowly.
- For best flavour, grate the parmesan just before serving so it melts slightly into the hot sauce.
Substitutions
- Replace Pancetta with Prosciutto for a slightly sweeter, less fatty filling.
- Replace Parmesan with Pecorino Romano cheese for a sharper, saltier finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with the sauce. Reheat gently in a covered pan over a low heat until piping hot, adding a splash of water if the sauce has thickened too much; freeze for up to 2 months and defrost overnight in the fridge before reheating.
