Chicken Souvlaki Bowl
Why this recipe works
- Bright, herby marinade: Lemon zest and juice, garlic, oregano and olive oil quickly season the chicken with classic souvlaki-style flavour.
- Tender chicken: Boneless chicken thighs stay moist over medium-high heat and take well to charring without drying out.
- Balanced bowl format: Fluffy rice, crisp vegetables and cool tzatziki turn the grilled chicken into a complete, satisfying meal.

Timing notes
- Short marinade: The chicken only needs a brief marinade while the rice and vegetables are prepared; avoid leaving it too long in the lemon juice, as the acid can affect the texture.
- Rest before slicing: Let the grilled chicken rest briefly before cutting so the juices settle and the slices stay tender.
- Best served fresh: Assemble the bowls just before serving so the salad stays crisp and the tzatziki remains cool.
Ingredient notes
- Chicken thighs work well: Boneless, skinless thighs are forgiving on the grill and give a juicier result than leaner cuts.
- Dried oregano is appropriate: Dried oregano has a concentrated, savoury aroma that suits this quick souvlaki-style marinade.
- Use the lemon fully: Zest adds fragrant citrus oils while the juice brings acidity, giving the chicken a brighter finish.
Make-ahead tips
- Store in components: Keep the chicken, rice, vegetables and tzatziki separate in airtight containers so the salad stays fresh and the sauce does not thin out.
- Reheat gently: Warm the chicken and rice until piping hot, then add the cold salad and tzatziki after reheating.
- Good for planned lunches: Cooked chicken and rice can be portioned ahead, with the raw vegetables and tzatziki added just before eating.
Authenticity notes
- Bowl-style adaptation: Traditional souvlaki is usually grilled meat served with bread or accompaniments; this version keeps the lemon-oregano chicken and turns it into a rice bowl.
- Tzatziki pairing: Cool, garlicky tzatziki is a natural match for grilled souvlaki-style chicken and balances the lemony marinade.

Ingredients
Instructions
- Finely grate the zest from the lemon, then squeeze the juice into a mixing bowl. Stir in the olive oil, crush in the garlic, then add the dried oregano, 1 tsp of the fine sea salt, and half the black pepper.
- Add the chicken thighs to the marinade and turn to coat well. Set aside for 15 minutes at room temperature while you prepare the rice and salad.
- Rinse the basmati rice until the water runs mostly clear, then tip into a large pot with 600 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, and cook on the lowest heat for 10 minutes, then take off the heat and leave covered for 10 minutes. Fluff with a fork.
- Cut the cucumber into bite-size pieces, halve the cherry tomatoes, and thinly slice the red onion. Toss the vegetables together with the remaining 0.5 tsp fine sea salt and the remaining black pepper.
- Heat a grill to medium-high. Lift the chicken from the marinade, letting any excess drip back into the bowl, then grill for 5 to 7 minutes per side until nicely charred and cooked through. Rest for 3 minutes, then slice.
- Divide the rice between bowls and top with the sliced chicken and the salad vegetables. Finish each bowl with a generous dollop of tzatziki sauce, and serve straight away.
Recipe notes
Tips
- If using a frying pan instead of a grill, cook the chicken over medium-high heat and avoid moving it too soon so it browns well.
- For the juiciest result, do not skip the short rest after cooking; it helps the chicken stay tender when sliced.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets; reduce cooking time slightly and watch closely to avoid drying out.
- Replace Basmati rice with Jasmine rice for a similarly fluffy bowl.
- Replace Lemon with Lime for a sharper, slightly more aromatic marinade.
Storage
- Refrigerate up to 3 days
- Store the chicken, rice, and salad vegetables separately in airtight containers. Reheat the chicken and rice in a 180°C (355°F) oven or in a covered pan with a splash of water until piping hot, and add the tzatziki sauce after reheating.
