Kruimelvlaai (Dutch Crumb Tart)

Kruimelvlaai belongs to the Dutch vlaai family: a shallow, yeasted tart with a soft bread-like base and a generous layer of buttery crumbs. Unlike fruit-filled vlaai, this version keeps the focus on texture — tender dough underneath, cinnamon-scented crumble on top, and crisp edges once baked and cooled. It is the kind of pastry that suits coffee, afternoon tea or a simple dessert, especially because it slices neatly and keeps well. The key to its character is not overworking the topping, so the crumbs bake into a mix of fine, sandy pieces and larger golden clumps.

Why this recipe works

  • Yeasted vlaai base: The enriched dough gives the tart a soft, bready foundation rather than the crisp shortcrust texture of many other tarts.
  • Crisp crumble topping: A mix of fine crumbs and larger buttery clumps bakes into a golden topping with light crunch and cinnamon warmth.
  • Good for preparing ahead: The tart slices best once fully cooled, making it well suited to baking before serving rather than rushing straight from the oven.

Timing notes

  • Judge the dough by volume: The first rise is ready when the dough has roughly doubled; a cool kitchen may need longer than the stated time.
  • Cool before slicing: Letting the vlaai cool completely helps the base settle and allows the crumb topping to become crisper.

Texture tips

  • Keep the crumble cool: Chilling the topping before baking helps the butter stay in distinct pieces, giving a better crumb texture.
  • Release steam after baking: After the initial cooling time in the tin, remove the ring and cool on a rack so trapped steam does not soften the base.
  • Do not compact the topping: Press the crumbs on lightly so they adhere, but avoid flattening them into a dense layer.

Authenticity notes

  • Vlaai-style dough: Unlike many crumb tarts, this uses a yeasted base, which is a defining feature of vlaai-style baking.
  • Simple bakery finish: The topping is intentionally uncomplicated: butter, sugar, flour and cinnamon create the recognisable crumb layer.

Make-ahead tips

  • Make the crumbs early: The crumble topping can be mixed while the dough proves and kept chilled until needed.
  • Freeze in slices: Wrap cooled slices well and freeze for up to two months, then thaw overnight in the fridge.
  • Refresh before serving: Thawed slices can be refreshed in a 160°C (320°F) oven for 6 to 8 minutes to revive the crumb topping.

Instructions

  1. Warm the milk in a small saucepan until just lukewarm, then take off the heat. Whisk in the sugar and yeast, and leave for 5 minutes until slightly foamy.
  2. Put the flour and salt in a mixing bowl and make a well in the centre. Add the egg and the milk mixture, then mix to a shaggy dough; knead for 6 to 8 minutes until smooth and elastic.
  3. Melt the butter and knead it into the dough until fully absorbed and the dough looks glossy. Cover and leave in a warm place for 60 minutes, or until doubled in size.
  4. Meanwhile, make the crumbs: mix the flour, sugar, cinnamon and salt in a bowl. Rub in the butter with your fingertips until you have a mix of small and larger clumps, then chill while the dough finishes proving.
  5. Heat the oven to 200°C (390°F). Press the risen dough evenly into the base of a 24 cm springform tin, pushing it slightly up the sides to form a shallow edge.
  6. Scatter the crumb topping evenly over the dough, gently pressing it on so it adheres without compacting. Bake for 22 to 28 minutes until the crumbs are deep golden and the edges are browned.
  7. Cool the kruimelvlaai in the tin for 20 minutes, then release the ring and cool completely on a rack before slicing. The crumbs will crisp as it cools.

Recipe notes

Tips

  • For the best crumb texture, keep the butter for the topping cool and stop rubbing in while you still have a mix of fine crumbs and pea sized clumps.
  • If the crumbs brown too quickly, move the vlaai to a lower shelf for the final 5 minutes so the base finishes baking without over colouring the top.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use an egg stamped with the British Lion mark or another pasteurised egg.

Substitutions

  • Replace Whole milk with low-fat-milk for a slightly lighter crumb and dough.
  • Replace Ground cinnamon with mixed-spice for a warmer, more aromatic topping.

Storage

  • Refrigerate up to 3 days
  • Store in an airtight container; bring to room temperature before serving for the best texture. Freeze slices well wrapped for up to 2 months, then thaw overnight in the fridge and refresh in a 160°C (320°F) oven for 6 to 8 minutes.
