Pissaladière (Provençal Onion Tart with Anchovies and Olives)
Why this recipe works
- Slow-cooked onion topping: Cooking the onions gently keeps them sweet, soft and mellow rather than browned or sharp.
- Clear savoury contrast: Sweet onions, salty anchovies, briny olives and thyme create the classic balance that defines pissaladière.
- Crisp, light base: A thin yeasted dough and preheated baking tray help the tart bake through with golden, crisp edges.

Timing notes
- Allow the dough to rise fully: The dough should look puffy and roughly doubled before rolling; this gives the base lightness without making it bready.
- Rest before slicing: Let the tart stand briefly after baking so the onion topping settles and the slices cut more cleanly.
- Serve warm or at room temperature: Pissaladière holds well after baking, making it useful for casual meals, picnics or aperitif-style serving.
Texture tips
- Use the hot tray for a better base: Sliding the rolled dough onto a preheated tray helps the underside start crisping quickly.
- Reduce the onions properly: The onion mixture should be soft and reduced rather than wet, so it spreads evenly without weighing down the dough.
- Warm the anchovies briefly: Adding the anchovies and olives near the end keeps their flavour distinct and prevents the anchovies from drying out.
Ingredient notes
- Choose mellow onions: Yellow onions suit this tart because they become sweet and soft when cooked slowly in olive oil.
- Season with restraint: Anchovies and olives bring plenty of salt, so the onion topping only needs gentle seasoning before the final bake.
- Changing the flour affects the base: Plain flour can be used, but the base will be softer and less chewy than one made with bread flour.
Make-ahead tips
- Cook the onions in advance: The onion topping can be prepared ahead and chilled, then brought back to a spreadable texture before assembling.
- Reheat on a tray: Warm leftovers on a baking tray at 200°C (390°F) so the base crisps back up rather than steaming.
- Freeze baked slices: Cool the tart completely, wrap slices well, and reheat from frozen on a baking tray until hot and crisp.

Instructions
- In a mixing bowl, stir together the bread flour, instant yeast, caster sugar and fine sea salt. Add 15 ml olive oil and the lukewarm water, then mix to a soft dough. Knead for 6 to 8 minutes until smooth and elastic.
- Cover the bowl and leave the dough to rise until puffy and roughly doubled in size. This should take about 45 minutes in a warm kitchen. Meanwhile, start on the onions.
- Peel the yellow onions, halve them, then slice thinly. Warm 30 ml olive oil in a saucepan over a low heat, add the onions and a pinch of fine sea salt, and cook gently. Stir often for 25 to 30 minutes until very soft, sweet and reduced, without letting them brown.
- Strip the thyme leaves from the sprigs and stir them through the onions, then take the pan off the heat. Heat the oven to 220°C (430°F) and place a baking tray inside to heat up. Let the onion mixture cool slightly so it spreads easily.
- Roll the dough into a thin rectangle, about 3 to 4 mm thick. Carefully slide it onto the hot baking tray. Spread the onions evenly over the dough, leaving a small border.
- Bake for 15 to 18 minutes until the base is cooked through and the edges are crisp and golden. Arrange the anchovy fillets over the tart in a loose lattice, then scatter over the black pitted olives. Return to the oven for 2 minutes, just to warm through.
Recipe notes
Tips
- Keep the onions on a low heat and stir regularly; the goal is soft, sweet onions without browning, which keeps the topping mellow against the salty anchovies.
- For neat slices, let the tart stand for 10 minutes after baking so the topping settles before cutting.
- If serving to anyone who should avoid raw or undercooked foods, make sure the tart is baked until the base is fully cooked through and serve it piping hot.
Substitutions
- Replace Fresh thyme with Fresh oregano for a more aromatic, peppery herb note.
- Replace Bread flour with Plain flour for a slightly more tender, less chewy base.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 8 to 10 minutes until hot and crisp. Freeze slices well wrapped for up to 2 months; reheat from frozen at 200°C (390°F) for 12 to 15 minutes.
