Tarte Tatin (Caramelised Apple Tart)
Why this recipe works
- Classic texture contrast: Tender caramelised apples sit over crisp puff pastry, giving the tart its signature upside-down finish.
- Deep caramel flavour: Cooking the butter and sugar to a deep amber caramel before baking gives the apples a rich, glossy coating.
- Traditional method: Starting the fruit in caramel on the hob, then finishing with pastry in the oven, creates the recognisable tarte Tatin structure.

Ingredient notes
- Choose firm apples: Firm tart-sweet apples hold their shape better during caramelising and baking; softer varieties can collapse into the caramel.
- Use all-butter pastry if possible: All-butter puff pastry gives a richer flavour and a cleaner, more delicate crispness than pastry made with vegetable fats.
- Lemon keeps the flavour balanced: A little lemon helps slow browning and cuts through the sweetness of the caramel.
Timing notes
- Rest briefly before turning out: Let the tart stand for a few minutes after baking so the caramel settles slightly, but invert it while still warm so it does not set hard.
- Best served warm: Tarte Tatin is at its best when warm, with the caramel loose and the pastry still crisp.
- Best on the day it is baked: The pastry softens as it sits, so the freshest texture comes from serving it the same day.
Common mistakes
- Do not walk away from the caramel: Once the sugar begins to colour, it can darken quickly. Swirl the pan and remove it from the heat if it is approaching a very dark brown.
- Avoid loose apple packing: Pack the apples tightly in the pan, as they shrink during cooking and need to form a full, even topping once inverted.
- Do not wait too long to invert: If the caramel cools fully in the pan, the apples may stick and the tart can be harder to release cleanly.
Serving ideas
- Serve with cream or crème fraîche: A spoonful of crème fraîche, pouring cream or vanilla ice cream balances the warm caramel and buttery pastry.
- Pair with coffee or tea: Black coffee, lightly brewed tea or an apple-forward dessert drink works well with the caramelised fruit.

Instructions
- Heat the oven to 200°C (390°F). On a lightly floured surface, roll the puff pastry to a round about 2 to 3 cm wider than a 24 cm tart tin, then chill it while you prepare the apples.
- Halve, peel and core the apples, then rub them with the cut lemon to slow browning. Squeeze 1 tbsp lemon juice into a bowl and toss the apples in it.
- Melt the butter in an ovenproof frying pan over medium heat, then add the caster sugar and salt. Cook, swirling the pan, for 4 to 6 minutes until the sugar dissolves and turns a deep amber caramel.
- Stir in the vanilla extract, then carefully arrange the apples cut-side up in the caramel, packing them tightly. Cook for 8 to 10 minutes, spooning caramel over the apples, until they look glossy and have softened slightly.
- Take the pan off the heat and lay the puff pastry over the apples, tucking the edges down around the fruit. Prick the pastry a few times with a knife tip to let steam escape.
- Bake for 25 to 30 minutes until the pastry is puffed and deep golden. Rest for 5 minutes so the caramel settles but does not set hard.
- Run a knife around the edge, place a serving plate over the pan, then invert confidently in one motion. Lift off the pan and rearrange any apples if needed, then serve warm.
Recipe notes
Tips
- Choose firm apples so they hold their shape; softer apples can collapse into the caramel.
- Watch the caramel closely once it starts to colour, and swirl the pan rather than stirring to reduce crystallisation.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the tart is baked until the pastry is fully cooked through and the filling is piping hot.
Substitutions
- Replace vanilla extract with 1 tsp orange extract for a more citrusy aroma.
- Replace lemon with lime for a slightly sharper, more tropical acidity.
Storage
- Refrigerate up to 2 days
- Cool completely, then cover and refrigerate. Reheat slices on a baking tray in a 180°C (355°F) oven for 8 to 12 minutes until warmed through and the pastry re-crisps.
