Smoked Turkey and Avocado Club Sandwich

A club sandwich is all about height, structure and well-defined layers: toasted bread, crisp lettuce, sliced meat, tomato and a creamy dressing, usually cut into neat quarters for easy eating. This version keeps that recognisable American deli style but adds ripe avocado for a softer, richer texture alongside smoked turkey and crisp streaky bacon. Lemon-spiked mayonnaise sharpens the filling without overpowering it, while firm tomato and iceberg lettuce keep each bite fresh and crunchy. Best served straight after assembling, it makes a substantial lunch that still feels clean, balanced and easy to customise.

Why this recipe works

  • Balanced textures: Crisp bacon, iceberg lettuce and toasted bread contrast with creamy avocado and mayonnaise.
  • Fast lunch format: Using thinly sliced smoked turkey keeps the cooking limited to the bacon and toast.
  • Freshness in the filling: Lemon in the mayonnaise cuts through the bacon and avocado, keeping the sandwich bright rather than heavy.

Texture tips

  • Keep the toast crisp: Place wetter ingredients, especially tomato and avocado, between lettuce and turkey rather than directly against the bread.
  • Let the bacon settle: Cool the bacon briefly after frying so it firms up before being layered into the sandwich.

Ingredient notes

  • Choose ripe but sliceable avocado: The avocado should yield gently when pressed but still hold clean slices, so the layers do not slide apart.
  • Use firm ripe tomatoes: A ripe but firm tomato gives sweetness and freshness without releasing too much juice into the toast.

Serving ideas

  • Serve with something crisp: Pair with crisps, pickles, slaw or a simple green salad to keep the meal light and balanced.
  • Secure before cutting: For neat club sandwich quarters, hold the stack steady with cocktail sticks before slicing with a bread knife.

Timing notes

  • Best served immediately: The sandwich has the best contrast while the toast and bacon are still crisp and the avocado is freshly sliced.

  1. Cook the streaky bacon in a frying pan over medium heat for 6 to 8 minutes, turning, until deep golden and crisp. Transfer to a plate and let it cool slightly so it stays crisp.
  2. Toast the white bread until evenly golden. Set aside 2 slices to be the middle layer, and place the remaining 4 slices on a board.
  3. Stir the mayonnaise with a squeeze of lemon juice and the black pepper. Taste and add a little more lemon juice if you want it brighter.
  4. Halve the avocado, remove the stone, then slice the flesh. Slice the tomato into even rounds.
  5. Spread the lemon mayonnaise over one side of each slice of toast. On two slices, layer iceberg lettuce, half the smoked turkey, half the avocado, and a few tomato slices, then top each with a middle slice (mayo-side down).
  6. Build the second layer on each sandwich with more lettuce, the remaining smoked turkey, avocado and tomato, then add 3 slices of bacon per sandwich. Cap with the final toast slices, mayo-side down, press gently, then cut each sandwich into quarters and serve straight away.

Recipe notes

Tips

  • For clean quarters, chill the cooked bacon for 5 minutes, then cut the sandwiches with a sharp bread knife using gentle sawing strokes.
  • If serving for a picnic, keep the tomato slices in the middle of the sandwich so the bread stays drier for longer.

Substitutions

  • Replace mayonnaise with avocado oil mayonnaise for a slightly lighter flavour.
  • Replace white bread with whole-grain bread for a nuttier, sturdier club.

Storage

  • Refrigerate up to 1 days
  • Best eaten immediately. If needed, wrap tightly and refrigerate for up to 1 day; bring to cool room temperature for 10 minutes before eating, as toasting again will soften the lettuce and avocado.
