Pfannkuchen mit Schinken und Käse (Savoury German Pancakes with Ham and Cheese)
Why this recipe works
- Ready quickly: A simple batter and pre-cooked ham keep the recipe firmly in weeknight territory.
- Warm, savoury filling: Ham, Emmental and butter give the pancakes a satisfying richness without needing a sauce.
- Straightforward technique: The batter is cooked like thin pancakes, then filled and folded in the same pan.

Timing notes
- Let the batter stand briefly: A short rest allows the flour to hydrate, giving the pancakes a smoother texture and helping them spread evenly in the pan.
- Serve while warm: These are best served as soon as the cheese has softened, while the pancakes are still tender and lightly buttery.
Ingredient notes
- Use a good melting cheese: Emmental melts well and brings a mild nuttiness; Gruyere works too if you prefer a deeper, slightly stronger flavour.
- Cut the ham small: Tearing or slicing the ham into bite-sized pieces makes the pancakes easier to fold and eat.
- Season with the ham in mind: Cured cooked ham and cheese both add salt, so keep the batter seasoning moderate and adjust at the table if needed.
Common mistakes
- Avoid high heat: Too much heat can brown the butter before the pancake has set. A steady medium heat gives better colour and control.
- Do not make the pancakes too thick: Pour in just enough batter to coat the base of the pan; thicker pancakes are harder to fold neatly around the filling.
Make-ahead tips
- Prepare the filling ahead: The cheese, chives and ham can be prepared in advance, then kept chilled until you are ready to cook.
- Reheat gently: Warm leftovers in a frying pan over low heat, turning once, until piping hot and the cheese has softened again.

Instructions
- Put the flour, salt and pepper in a mixing bowl. Whisk in the eggs, then gradually whisk in the milk until you have a smooth batter. Leave to stand while you prepare the filling.
- Grate the Emmental and finely snip the chives. Tear or cut the cooked ham into bite-sized pieces. Stir half the chives through the cheese and keep the rest for serving.
- Melt a small knob of the butter in a frying pan over medium heat. Pour in about a quarter of the batter and swirl to coat the base; cook for 1 to 2 minutes until the underside is golden and the top looks set. Flip and cook for 30 to 60 seconds, then slide onto a plate.
- Repeat with the remaining batter, melting a little more butter as needed, to make 4 pancakes. Keep the heat at medium so they colour evenly without burning. Stack the pancakes on the plate as you go.
- Return one pancake to the pan and scatter over a quarter of the ham and a quarter of the cheese mixture. Fold into quarters and warm for 1 to 2 minutes, turning once, until the cheese is melting. Repeat with the remaining pancakes, then serve sprinkled with the remaining chives.

Serving suggestions
This recipe pairs well with:
Tips
- For the neatest pancakes, whisk the batter until smooth, then let it sit for 5 minutes so the flour hydrates and the batter thickens slightly.
- Keep the pan at a steady medium heat; if the butter starts browning quickly, lower the heat so the pancakes cook through before they colour too much.
Substitutions
- Replace Emmental cheese with Gruyere cheese for a slightly nuttier flavour.
- Replace fresh chives with fresh flat-leaf parsley for a different herb note.
Storage
- Refrigerate up to 2 days
- Cool leftovers, then refrigerate in a sealed container. Reheat in a frying pan over low heat for 3 to 5 minutes, turning once, until piping hot and the cheese has softened.
