Ayam Rica-Rica (Manado-Style Spicy Chicken)

From Manado in Indonesia, ayam rica-rica is a chilli-forward chicken dish known for its direct heat, aromatic paste and bright citrus finish. Bone-in chicken thighs give the sauce depth as they simmer with shallot, garlic, ginger, tomato, lemongrass and bay, while browning the meat first adds savoury richness. The sauce should be thick enough to spoon over rice, with ripe tomato softening the chilli and lime cutting through at the end. It is bold, warming and practical for dinner, especially served simply with steamed jasmine rice to catch the spicy, tangy sauce.

Why this recipe works

  • Layered aromatics: Shallot, garlic, ginger, chilli, tomato, lemongrass and bay build a sauce with heat, fragrance and savoury depth.
  • Bright finish: Lime juice and zest are added off the heat, keeping the sauce fresh and balancing the richness of the chicken.
  • Saucy and satisfying: Bone-in chicken simmers until tender, creating a rich sauce that is ideal for spooning over steamed rice.

Adjust the heat

  • For a gentler heat: Remove the chilli seeds and membranes before cooking, or use fewer chillies for a softer, more aromatic sauce.
  • For extra fire: Keep the chilli seeds and membranes in the paste, then taste before serving and add more fresh chilli only if needed.
  • Keep it balanced: Finish with lime and adjust the salt at the end; acidity and seasoning help the chilli taste rounded rather than harsh.

Ingredient notes

  • Bruise the lemongrass: Lightly bashing the stalk helps release its citrusy aroma into the sauce while keeping it easy to remove before serving.
  • Use ripe tomatoes: Ripe tomatoes break down more readily and give the sauce a fuller, naturally sweeter base.
  • Add lime off the heat: Stirring in the lime at the end preserves its brightness and keeps the finished sauce lively.

Common mistakes

  • Do not crowd the chicken: Brown the thighs in a single layer so they develop colour rather than steaming in the pot.
  • Avoid a hard boil: Once the chicken is back in the pot, keep the sauce at a gentle simmer so the meat stays tender.
  • Adjust the sauce before serving: If it looks thin, simmer uncovered briefly; if it thickens too much, loosen it with a splash of water.

Make-ahead tips

  • Make the chicken ahead: The chicken and sauce can be cooked in advance, cooled fully and refrigerated for up to 3 days.
  • Reheat gently: Warm in a covered saucepan with a splash of water until piping hot, taking care not to reduce the sauce too far.
  • Freeze the sauce, not the rice: Freeze the chicken and sauce for up to 2 months, then defrost overnight in the fridge before reheating.

  1. Rinse the jasmine rice until the water runs mostly clear, then cook it with a pinch of the fine sea salt according to packet instructions. Keep warm with the lid on while you make the chicken.
  2. Peel and roughly chop the shallots, garlic and ginger. Slice the red chillies (remove the seeds for less heat), then roughly chop the tomatoes.
  3. In a large pot over medium-high heat, warm the vegetable oil. Add the chicken thighs in a single layer and brown well on both sides, 6 to 8 minutes total, then transfer to a bowl.
  4. Lower the heat to medium and add the shallots with a pinch of the fine sea salt. Cook for 3 to 4 minutes until softened, scraping up any browned bits from the pot.
  5. Add the garlic, ginger and red chillies and cook for 1 to 2 minutes until fragrant. Stir in the tomatoes and cook for 5 minutes until they start to break down into a thick, spoonable sauce.
  6. Bruise the lemongrass by bashing it lightly, then add it to the pot with the bay leaves. Return the chicken and any resting juices to the pot, add 250 ml water, and bring to a gentle simmer.
  7. Cover and simmer on low for 18 to 22 minutes, turning the chicken once, until the meat is tender and cooked through. If the sauce looks too thick, add a splash more water; if too thin, simmer uncovered for a few minutes to reduce.
  8. Finely grate the zest from 1 lime, then juice both limes. Off the heat, stir the lime juice and zest into the sauce and taste for fine sea salt.
  9. Discard the lemongrass and bay leaves. Serve the ayam rica-rica with the steamed jasmine rice, spooning plenty of sauce over the top.

Steamed jasmine rice

Tips

  • For the best flavour, brown the chicken properly before adding the aromatics; you want deep golden patches, not pale steaming.
  • If you are sensitive to heat, remove the chilli seeds and membranes before cooking, and add the lime juice off the heat to keep the finish bright.

Substitutions

  • Replace chicken thighs with chicken legs for a similar cooking time and a slightly richer result.
  • Replace shallot with yellow onion for a more robust, less sweet base.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a covered saucepan with a splash of water until piping hot; freeze the chicken and sauce (not the rice) for up to 2 months and defrost overnight in the fridge before reheating.
