Pad Krapow Moo (Thai Basil Pork Stir-Fry)
Why this recipe works
- Fast stir-fry method: Minced pork cooks quickly in a hot wok, making this a practical dinner with very little waiting time.
- Balanced savoury sauce: Soy sauce, oyster sauce, fish sauce and palm sugar create a glossy coating with saltiness, sweetness and deep umami.
- Fresh basil finish: Adding the basil off the heat keeps the leaves aromatic rather than dull or overcooked.

Adjust the heat
- For a gentler version: Use less chilli or remove some of the seeds before chopping, while keeping the garlic and basil for flavour.
- For more heat: Add extra chilli or choose a hotter variety, frying it briefly with the garlic so the heat spreads through the oil.
- Keep the heat balanced: The salty-sweet sauce and jasmine rice help soften the chilli, so adjust the heat without losing the dish’s savoury depth.
Authenticity notes
- Basil choice: The dish name refers to holy basil; Thai basil is a practical substitute, with a sweeter, more aniseed-led flavour.
- Rice pairing: Jasmine rice is the natural base, catching the glossy sauce and balancing the intensity of the pork.
- Optional fried egg: A fried egg is a common addition; cook it fully if serving anyone who needs to avoid runny eggs.
Common mistakes
- Letting the aromatics darken: Garlic and chilli should smell fragrant, not brown heavily, or the stir-fry can turn bitter.
- Starting with a cool pan: If the wok or frying pan is not hot enough, the pork releases liquid and steams instead of taking on a little colour.
- Adding basil too early: Stir the basil through only at the end so it wilts gently and keeps its fresh aroma.
Make-ahead tips
- Short-term meal prep: The cooked pork can be cooled quickly and refrigerated in an airtight container for up to 2 days.
- Reheat carefully: Warm the pork in a wok or frying pan with a splash of water until piping hot; reheat the rice separately until steaming.
- Best freshly finished: The basil flavour is brightest just after cooking, so add fresh basil at serving time when practical.

Ingredients
Instructions
- Rinse the jasmine rice until the water runs mostly clear, then add it to a saucepan with the water. Bring to the boil, cover, and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
- Meanwhile, finely chop the garlic and green chilli pepper. In a small bowl, stir together the palm sugar, light soy sauce, oyster sauce and fish sauce until the sugar dissolves as much as it can.
- Heat the vegetable oil in a wok (or large frying pan) over medium-high heat. Add the garlic and chilli and stir-fry for 20 to 30 seconds until fragrant, keeping it moving so it does not burn.
- Add the minced pork and stir-fry, breaking it up with a wooden spoon, for 3 to 4 minutes until no longer pink and starting to take on a little colour. Pour in the sauce and cook for 1 to 2 minutes, stirring, until it looks glossy and lightly coats the pork.
- Turn off the heat and add the fresh Thai basil. Toss for 20 to 30 seconds until just wilted and aromatic. Serve straight away over the jasmine rice.
Recipe notes
Tips
- Keep the wok hot and work quickly: the garlic and chilli should smell fragrant but not turn dark, or the stir-fry can taste bitter.
- For the most traditional flavour, tear the basil leaves just before adding them so they stay bright and release their aroma.
- If serving to anyone who should avoid undercooked eggs, skip the optional fried egg topping or ensure it is cooked until the white and yolk are fully set.
Substitutions
- Replace Fresh Thai basil with fresh basil for a similar look, though the flavour will be less peppery and aniseed.
- Replace Palm sugar with light brown sugar for a similar sweetness and caramel note.
- Replace Light soy sauce with dark soy sauce for a deeper colour and slightly richer flavour, but use a little less as it can be stronger.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in an airtight container. Reheat the pork in a wok or frying pan over medium heat with a splash of water until piping hot; reheat rice separately until steaming hot.
