Melanzane alla Parmigiana (Baked Aubergine with Tomato and Cheese)
Why this recipe works
- Layered flavour: Basil, garlic, tomato passata and two cheeses build depth without complicating the preparation.
- Soft, creamy layers: Baking the aubergine before assembling keeps it tender while helping the finished dish avoid excess moisture.
- Good for preparing ahead: The baked layers hold well after resting, and leftovers reheat neatly from the fridge or freezer.

Timing notes
- Rest before slicing: Let the dish stand for the full resting time after baking so the cheese and sauce settle into defined layers.
- Use the oven time well: Make the tomato sauce while the aubergine bakes, then assemble once the slices are tender and lightly golden.
Texture tips
- Keep the layers from turning watery: Pat the salted aubergine dry thoroughly and drain very wet mozzarella before layering.
- For cleaner portions: Slice after resting rather than straight from the oven; the structure will be much neater.
Authenticity notes
- Baked rather than fried aubergine: Many traditional versions fry the aubergine before layering; baking gives a lighter, more practical everyday version while keeping the familiar tomato-and-cheese character.
- Classic Italian flavours: Tomato, basil, mozzarella and Parmigiano Reggiano give the dish its recognisable savoury, cheesy finish.
Make-ahead tips
- Assemble ahead: The dish can be assembled in advance and baked later, making it useful for relaxed entertaining or batch cooking.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, then uncover briefly if you want the top to regain colour.
- Freeze after baking: Cool completely before freezing, then thaw overnight in the fridge before reheating for the best texture.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Slice the aubergine into rounds about 1 cm thick, lay them in a single layer and sprinkle with 1 tsp of the fine sea salt; leave for 20 minutes, then pat dry.
- Arrange the aubergine on a baking tray and brush both sides with about half the olive oil. Bake for 20 to 25 minutes, turning once, until tender and lightly golden.
- Meanwhile, warm the remaining olive oil in a large frying pan over medium heat. Add the garlic and cook for 30 to 60 seconds until fragrant, then stir in the tomato passata, remaining 1 tsp salt and the black pepper; simmer for 10 minutes until slightly thickened.
- Reduce the oven to 200°C (390°F). Tear most of the fresh basil into the tomato sauce, reserving a few leaves for the top; slice the mozzarella and finely grate the parmesan.
- Spoon a thin layer of tomato sauce into a baking dish, then add a layer of aubergine. Dot with mozzarella, sprinkle with parmesan, and repeat the layers, finishing with sauce, the remaining cheeses and the reserved basil.
- Bake for 25 minutes until bubbling and golden at the edges. Rest for 10 minutes so the layers set, then slice and serve.
Recipe notes
Tips
- Patting the salted aubergine dry helps it bake up tender rather than watery, and keeps the finished dish from weeping.
- If your mozzarella is very wet, drain it well before slicing so the layers stay defined.
- For cleaner slices, let the dish rest the full 10 minutes before cutting.
Substitutions
- Replace Mozzarella with Fresh mozzarella for a softer, creamier melt.
- Replace Parmesan with Pecorino Romano cheese for a sharper, saltier finish.
- Replace Fresh basil with Fresh oregano for a more robust herbal note.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; if frozen, thaw overnight in the fridge before reheating.
