Air Fryer Shrimp and Vegetables
Why this recipe works
- Fast cooking: The vegetables and prawns cook quickly in the air fryer, making the recipe practical for a weeknight dinner.
- Bright, balanced seasoning: Lime cuts through the sesame oil and soy sauce, keeping the dish fresh rather than heavy.
- Good texture contrast: The prawns stay tender while the courgette, pepper and snap peas keep a crisp-tender bite.

Timing notes
- Serve promptly: Prawns are best served as soon as they turn opaque, while the vegetables still have a little snap.
- Prep first: Have the vegetables cut and the prawns coated before the air fryer stage, as the cooking time is very short.
Common mistakes
- Overcooking the prawns: Add the prawns only for the final few minutes; leaving them in too long can make them firm and rubbery.
- Overfilling the basket: If the air fryer basket is small, cook in batches so the vegetables roast rather than steam.
Ingredient notes
- Use prepared prawns: Peeled and deveined king prawns keep the recipe quick and make the final dish easier to eat.
- Finish with fresh lime: A final squeeze of lime after cooking gives the rice bowl a cleaner, brighter flavour.
Make-ahead tips
- Prepare the vegetables ahead: The courgette, pepper and snap peas can be trimmed and cut in advance, then refrigerated until cooking.
- Reheat gently: Warm leftovers in the air fryer at 180°C (355°F) or in the microwave until piping hot, then refresh with lime.

Instructions
- Rinse the jasmine rice, then tip into a saucepan with the water and bring to the boil. Cover and cook on the lowest heat for 10 minutes, then take off the heat and rest, covered, for 5 minutes. Fluff with a fork before serving.
- Meanwhile, cut the courgette into thick half-moons and the red pepper into bite-size strips. Trim any stringy ends from the snap peas. Preheat the air fryer to 200°C (390°F).
- In a mixing bowl, combine the sesame oil and soy sauce, then finely grate in the garlic and ginger. Squeeze in half the lime and stir well. Add the prawns and toss to coat.
- Put the courgette, red pepper and snap peas in the air fryer basket and cook for 5 minutes, shaking halfway, until crisp-tender. Add the prawns (including any marinade) and cook for 3 to 4 minutes more, shaking once, until the prawns are just opaque. Serve over the rice with a squeeze of the remaining lime and a sprinkle of roasted sesame seeds.

Tips
- Keep an eye on the prawns: they cook fast in an air fryer, so add them only for the final few minutes to avoid a rubbery texture.
- If your air fryer basket is small, cook the vegetables first, tip them into a bowl, then air-fry the prawns separately and combine at the end.
Substitutions
- Replace Soy sauce with Light soy sauce for a slightly lighter, less intense seasoning.
- Replace Lime with Lemon for a similar sharp finish.
- Replace Sesame oil with Olive oil if you want a more neutral flavour.
Storage
- Refrigerate up to 2 days
- Cool and refrigerate leftovers in an airtight container. Reheat in the air fryer at 180°C (355°F) for 3 to 5 minutes or in the microwave until piping hot; add a fresh squeeze of lime after reheating.
