Caribbean Macaroni Pie
Why this recipe works
- Creamy but sliceable: Evaporated milk, egg and Cheddar bind the macaroni into a savoury custard that sets firmly without feeling dry.
- Savoury depth: Softened onion, garlic and mustard add flavour through the pasta rather than relying on cheese alone.
- Flexible serving: The pie can be served as a vegetarian main or cut into neat squares as a side for stews and braised dishes.

Timing notes
- Rest before slicing: Let the pie stand for the full 10 minutes after baking so the custard firms and the squares cut cleanly.
- Best served hot: Serve once rested but still hot, when the top is golden and the centre is fully set.
Ingredient notes
- Why evaporated milk works: Evaporated milk gives the custard body and a subtle richness without making the bake too loose.
- Choose a good melting cheese: Cheddar gives the classic sharp, savoury flavour; a nuttier cheese such as Gruyere will make the pie more mellow.
- Cook the pasta slightly short: Boiling the macaroni just shy of al dente helps it finish in the custard without turning soft.
Authenticity notes
- Firm, home-style bake: Caribbean macaroni pie is typically made to set into slices rather than spoon like a loose macaroni cheese.
- Classic pairing: Its cheesy, savoury richness works especially well alongside Caribbean stews and saucy mains.
Make-ahead tips
- Bake ahead: Bake the pie, cool it completely, then refrigerate in a sealed container for up to 3 days.
- Reheat slices gently: Warm slices in a 180°C (355°F) oven until piping hot, covering loosely if the top is browning too much.
- Freeze in portions: Freeze well-wrapped slices for easy serving later, then thaw before reheating for the best texture.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Grease a baking dish with a little of the unsalted butter.
- Melt the remaining unsalted butter in a saucepan over medium heat. Add the yellow onion with a pinch of the fine sea salt and cook for 6 to 8 minutes until softened, then add the garlic and cook for 1 minute until fragrant.
- Bring a large pot of well-salted water to the boil and cook the macaroni until just shy of al dente, about 1 to 2 minutes less than the packet suggests. Drain well in a colander and return the pasta to the pot.
- Stir the onion and garlic into the macaroni. Add the evaporated milk, dijon mustard, remaining fine sea salt and black pepper, then mix until the pasta is evenly coated.
- In a bowl, whisk the egg until smooth. Stir in the cheddar cheese, then fold this mixture through the macaroni until well combined.
- Tip into the prepared baking dish and press down firmly so it bakes up in neat slices. Bake for 25 to 30 minutes until set and golden on top, with only a slight wobble in the centre.
- Rest for 10 minutes so the pie firms up. Slice into squares and serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- For clean slices, press the macaroni firmly into the dish before baking and let it rest for the full 10 minutes after it comes out of the oven.
- If the top is browning too quickly before the centre is set, loosely cover the dish and continue baking until firm.
Substitutions
- Replace Cheddar cheese with Gruyere cheese for a nuttier, more savoury finish.
- Replace Dijon mustard with Whole-grain mustard for a milder heat and a coarser texture.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat slices in a 180°C (355°F) oven for 12 to 15 minutes until piping hot; freeze well-wrapped slices for up to 2 months and reheat from thawed.
