Saengseon Jeon (Korean Pan-Fried Fish)
Why this recipe works
- Quick cooking: Small pieces of fish cook in just a few minutes, making this a practical appetiser or side dish.
- Classic jeon method: A light flour coating helps the seasoned egg cling to the fish, giving each piece its recognisable golden finish.
- Balanced serving: Soy sauce adds salt and umami at the table, keeping the fish itself gently seasoned and delicate.

Authenticity notes
- Korean home-style jeon: This style of jeon is gently pan-fried rather than deep-fried, with the egg forming a soft coating around the fish.
- Serve with soy sauce: A simple soy-based dipping sauce is the classic accompaniment and adds savoury depth without masking the fish.
Ingredient notes
- Choose mild white fish: Cod works well because it is mild and flaky; pollock gives a similar result.
- Dry the fish well: Patting the fish dry helps the flour stick evenly and prevents the egg coating from sliding off in the pan.
- Rice flour option: Rice flour can replace plain flour for a slightly lighter coating.
Common mistakes
- Using heat that is too high: Keep the pan over medium heat so the egg colours gently while the fish cooks through.
- Overfilling the pan: Fry in a single layer; crowding traps steam and makes the coating less neat.
- Cooking the fish too long: Turn the pieces gently and remove them once just cooked through to keep the fish tender.
Make-ahead tips
- Best served freshly cooked: Saengseon jeon has the best texture when served warm soon after frying.
- Reheat gently: Warm leftovers in a lightly oiled frying pan over medium-low heat, or in a 180°C (355°F) oven, until piping hot.
- Prepare components ahead: The fish can be cut and the aromatics prepared in advance, but coat and fry just before serving for the neatest finish.

Ingredients
Instructions
- Pat the cod dry, then cut into bite-sized pieces. Finely grate the garlic and thinly slice the spring onion. Sprinkle the fish with black pepper, then toss with half the garlic and half the spring onion.
- Put the plain flour on a plate. In a mixing bowl, whisk the eggs with the sesame oil and the remaining garlic and spring onion. Dip each piece of fish in the flour, shake off the excess, then coat in the egg mixture.
- Heat the vegetable oil in a frying pan over medium heat. Pan-fry the fish in a single layer for 2 to 3 minutes per side, turning gently, until lightly golden and just cooked through. Transfer to a plate and repeat with the remaining fish, adding a little more oil if the pan looks dry.
- Serve warm with soy sauce for dipping. If you like, drizzle a little extra sesame oil into the soy sauce just before serving.
Recipe notes
Tips
- Keep the heat at medium so the egg sets and colours gently without browning before the fish is cooked through.
- Work in batches and avoid crowding the pan; it helps the coating stay neat and prevents the fish from steaming.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe to eat lightly cooked and make sure the fish is cooked through.
Substitutions
- Replace cod fillet with pollock fillet for a similar mild flavour and flaky texture.
- Replace plain flour with rice flour for a lighter coating.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat on a lightly oiled frying pan over medium-low heat for 2 to 4 minutes per side until piping hot, or warm in a 180°C (355°F) oven for 8 to 10 minutes.
