Prawn Balchão (Goan Spicy Prawn Pickle Curry)
Why this recipe works
- Bold pickle-style flavour: Dried chilli, vinegar, garlic and ginger give the sauce the sharp heat and savoury depth associated with balchão.
- Tang balanced with sweetness: Brown sugar softens the vinegar’s edge without making the curry taste sweet, keeping the sauce punchy but rounded.
- Fast seafood cooking: The masala is built first, then the prawns are added at the end so they cook quickly and remain juicy.

Adjust the heat
- For less heat: Discard most of the chilli seeds before soaking and use a gentler dried chilli if preferred.
- For more fire: Keep more of the chilli seeds in the soaking liquid, then crush the softened chilli into the sauce as it simmers.
- Keep the balance: If the sauce tastes too sharp or fiery, adjust with a little extra sweetness rather than diluting the vinegar base.
Ingredient notes
- Vinegar choice matters: White wine vinegar gives a clean tang; distilled white vinegar will taste sharper and more assertive.
- Use ripe tomatoes: Ripe tomatoes break down more readily into the thick, jammy masala that gives the sauce its body.
- Choose chilli by heat level: Different dried chillies vary widely in intensity, so select one that suits how hot you want the final curry to be.
Common mistakes
- Boiling the prawns: Once the prawns go in, keep the sauce at a gentle simmer and remove it from the heat as soon as they turn opaque.
- Letting the masala catch: Stir regularly while the tomatoes reduce, adding a splash of the chilli soaking liquid if the mixture starts sticking.
- Leaving the sauce too thin: Reduce the tomato masala until thick and glossy before adding the prawns, so the sauce coats rather than floods them.
Serving ideas
- Serve with rice: Plain steamed rice is the most practical pairing, absorbing the sharp, spicy sauce without competing with it.
- Add freshness: A small handful of fresh coriander can soften the heat and add colour just before serving.

Ingredients
Instructions
- Finely slice the onion. Finely chop the garlic and ginger, then roughly chop the tomatoes.
- Snip the dried red chilli into small pieces, discarding most of the seeds if you want it less fiery. Put it in a measuring jug with the white wine vinegar and water to soften while you start the curry.
- Heat the vegetable oil in a large frying pan over medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until soft and lightly golden.
- Stir in the garlic and ginger and cook for 1 minute until fragrant. Add the ground cumin and ground turmeric and cook for 30 seconds, stirring constantly.
- Add the tomatoes and cook for 6 to 8 minutes, stirring, until they break down into a thick, jammy masala. If it starts to catch, add a splash of the chilli soaking liquid.
- Pour in the remaining chilli soaking liquid, then add the brown sugar and the remaining salt. Simmer for 5 minutes until the sauce is glossy and slightly thickened; it should taste tangy, hot, and lightly sweet.
- Add the prawns and stir to coat in the sauce. Simmer gently for 3 to 5 minutes until the prawns are just opaque and juicy, then take off the heat straight away to avoid overcooking.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat gentle once the prawns go in; a hard boil will make them tough.
- For a smoother, more pickle-like sauce, crush the softened chilli pieces against the side of the pan as the sauce simmers.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are cooked through until fully opaque and piping hot.
Substitutions
- Replace White wine vinegar with Distilled white vinegar for a sharper, more assertive tang.
- Replace Brown sugar with Acacia honey for a rounder sweetness (add it off the heat to preserve its flavour).
- Replace Dried red chili with Korean chili flakes gochugaru for a fruitier heat (use the same amount).
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat with a splash of water until piping hot; avoid boiling to keep the prawns tender.
