Côte de Bœuf Rôtie au Beurre d’Herbes (Roast Rib of Beef with Herb Butter)
Why this recipe works
- High-heat start: Beginning the roast at 220°C (430°F) encourages browning before the oven is lowered for more controlled cooking.
- Built-in savoury depth: Dijon mustard seasons the crust, while garlic, herbs and lemon zest give the butter a bright, aromatic finish.
- Precise doneness: Using a thermometer helps protect the beef from overcooking and gives cleaner, more reliable results.

Timing notes
- Take off the chill: Letting the beef stand out of the fridge for 30 minutes before roasting helps it cook more evenly.
- Rest before slicing: A 15-minute rest allows the juices to settle, so the slices stay moist rather than flooding the board.
- Serve while hot: Spoon the herb butter over the sliced beef just before serving so it melts into the meat.
Ingredient notes
- Choose bone-in beef: A bone-in rib roast gives the dish its classic côte de bœuf character and makes an impressive centrepiece.
- Dry the surface well: Patting the beef dry before seasoning helps the outside brown rather than steam in the oven.
- Use fresh herbs: Fresh parsley and chives keep the butter bright; dried herbs will taste flatter here.
Common mistakes
- Starting in a cool oven: The initial blast of heat is important for browning, so make sure the oven is fully preheated to 220°C (430°F).
- Relying only on time: Roast size and oven performance vary, so check the centre with a thermometer rather than cooking by minutes alone.
- Slicing too soon: Cutting straight away releases too many juices; rest the beef loosely covered before carving.
Serving ideas
- Classic sides: Serve with roast potatoes, pommes purée or green beans for a simple French-inspired dinner.
- Extra richness: The herb butter is the main finish, but any resting juices can be spooned over the slices at the table.
- Wine match: A structured red such as Bordeaux, Syrah or Cabernet Sauvignon suits the richness of the beef.

Ingredients
Instructions
- Take the beef out of the fridge 30 minutes before cooking so it loses its chill. Heat the oven to 220°C (430°F). Pat the beef dry and set it in a roasting pan.
- Mix the fine sea salt and black pepper, then rub it all over the beef. Drizzle over the olive oil and rub again to coat. Spread the dijon mustard over the surface in a thin layer.
- Roast for 20 minutes to brown, then reduce the oven to 180°C (355°F). Continue roasting for 25 to 35 minutes, or until a thermometer reads 52°C (125°F) for medium-rare. If you prefer medium, roast to 57°C (135°F).
- Transfer the beef to a board and rest for 15 minutes, loosely covered. While it rests, finely grate the garlic and lemon zest into a bowl. Finely chop the fresh parsley and fresh chives.
- Stir the softened unsalted butter with the garlic, herbs and lemon zest until evenly mixed. Slice the beef off the bone, then cut into thick slices. Spoon the herb butter over the hot beef so it melts into the meat, and serve straight away.
Recipe notes
Tips
- For the best crust, make sure the beef is very dry before seasoning and roasting.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the beef to at least 63°C (145°F) and rest well before slicing.
Substitutions
- Replace dijon mustard with whole-grain mustard for a more textured, milder heat.
- Replace fresh parsley with fresh thyme for a more aromatic, woodsy herb butter.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat sliced beef in a 160°C (320°F) oven with any resting juices until piping hot, or serve cold; store herb butter separately and bring to room temperature before using. Freeze sliced beef and herb butter separately for best texture, then defrost overnight in the fridge.
