Advocaat (Dutch Egg Liqueur)
Why this recipe works
- Gentle custard method: Tempering the yolks with warm cream helps create a thick, smooth base without shocking the eggs.
- Velvety finish: Double cream, egg yolks and straining give the advocaat its rich, spoonable texture.
- Balanced richness: Vanilla softens the brandy while a small amount of salt keeps the sweetness from tasting flat.

Timing notes
- Most of the time is inactive: The hands-on stage is mainly whisking and gentle cooking; the longer time comes from cooling and chilling.
- Chill before serving: The advocaat needs time in the fridge to become cold and fully thickened before pouring.
- Serve cold: Because it contains egg yolks, keep it chilled until serving and return leftovers to the fridge promptly.
Texture tips
- Keep the heat low: Cook the mixture below a simmer and whisk continuously; if it begins to bubble, take it off the heat briefly.
- Strain for smoothness: Passing the liqueur through a sieve removes any tiny cooked egg particles and gives a cleaner finish.
- Loosen if needed: If it thickens too much after chilling, whisk briefly before serving to make it pourable again.
Ingredient notes
- Egg safety: Use pasteurised yolks if serving anyone who should avoid lightly cooked eggs.
- Choose a smooth brandy: The spirit is noticeable in such a simple liqueur, so a harsh brandy will come through in the final flavour.
- Double cream gives body: The richness of double cream helps create the classic thick texture; lighter creams will give a looser result.
Make-ahead tips
- Make ahead: Advocaat can be prepared in advance and stored in a clean, sealed jar in the fridge for up to 3 days.
- Do not reboil: If you prefer it slightly looser, warm it very gently and never bring it back to a boil.
- Whisk before serving: A brief whisk after chilling restores a smooth, even texture before pouring into small glasses.

Ingredients
Instructions
- Set a saucepan over a low heat and have a whisk and a clean bowl ready. In the bowl, whisk the egg yolks with the caster sugar and fine sea salt until the mixture looks paler and slightly thickened.
- Warm the double cream in the saucepan over a low heat until steaming but not boiling. Whisking constantly, slowly pour the warm cream into the yolk mixture to temper it.
- Pour the mixture back into the saucepan and cook over a very low heat, whisking continuously, for 8 to 12 minutes until it thickens to a spoonable, custard-like texture. Keep it below a simmer and do not let it boil.
- Remove from the heat and whisk in the vanilla extract. Add the brandy in a steady stream, whisking until completely smooth.
- Strain through a sieve into a clean bowl to ensure a silky finish. Leave to cool to room temperature, whisking once or twice as it cools to prevent a skin forming.
- Cover and chill until thick and cold, at least 1 hour. Serve in small glasses; if it is very thick, whisk briefly before pouring.
Recipe notes
Tips
- Keep the heat very low and whisk constantly; if the mixture starts to steam heavily or bubble, take it off the heat for 30 seconds, then continue.
- For a smoother texture, strain even if it looks perfect; it removes any tiny cooked egg bits.
- Food safety: this contains egg yolks, so serve chilled and avoid for anyone who should not consume eggs unless using pasteurised yolks.
Substitutions
- Replace Brandy with Cognac for a slightly fruitier, more aromatic finish.
- Replace Vanilla extract with Madagascar vanilla paste for a more pronounced vanilla flavour.
Storage
- Refrigerate up to 3 days
- Store in a clean, sealed jar in the fridge. Whisk briefly before serving if it thickens further; do not reboil when reheating, instead warm very gently if you prefer it slightly looser.
