Fried Green Tomatoes
Why this recipe works
- Crisp cornmeal coating: Cornmeal gives the crust a more pronounced crunch than flour alone, while the flour helps it adhere evenly.
- Tangy centre, rich dip: Firm green tomatoes bring natural sharpness, which is balanced by the creamy mayonnaise and hot sauce dip.
- Simple frying method: The coating and shallow pan-frying technique are straightforward, with visual cues such as a steady sizzle and deep golden colour.

Ingredient notes
- Choose firm green tomatoes: Use tomatoes that are fully green and firm, not just underripe red tomatoes, so they hold their shape during frying.
- Cornmeal adds crunch: Cornmeal creates a coarser, crisper crust; using only flour gives a finer coating with less texture.
- Control the warmth: Cayenne seasons the crust while hot sauce sharpens the dip, so both can be adjusted depending on how much heat you want.
Texture tips
- Let excess dip fall away: After dipping in the buttermilk mixture, allow the excess to drip off before coating so the crust stays defined rather than heavy.
- Keep the slices thick: Fairly thick rounds give the tomatoes time to soften in the middle while the outside becomes crisp.
- Serve straight away: Fried green tomatoes are at their best hot from the pan, before steam softens the coating.
Make-ahead tips
- Best eaten fresh: The crust is crispest immediately after frying, so this is not an ideal dish for long make-ahead storage.
- Keep the dip separate: Store any leftover tomatoes and sauce separately so the coating does not absorb moisture.
- Reheat on a tray: Reheat leftovers on a tray in a 200°C (390°F) oven until hot and crisp rather than microwaving them.
Authenticity notes
- Southern American style: Fried green tomatoes are strongly associated with Southern American cooking, where unripe tomatoes are often cooked into savoury dishes.
- Casual side or appetiser: They are commonly served simply and hot, often with a creamy, tangy, or spicy sauce alongside.

Ingredients
Instructions
- Slice the tomatoes into rounds about 1 cm thick. Sprinkle both sides lightly with a pinch of the fine sea salt and set aside while you prepare the coating.
- In a shallow bowl, mix the plain flour, cornmeal, remaining fine sea salt, black pepper, and cayenne pepper. In a second bowl, whisk the eggs with the buttermilk until smooth.
- Pour the vegetable oil into a large frying pan to a depth of about 5 mm and heat over medium-high until shimmering. Dip each tomato slice into the buttermilk mixture, let the excess drip off, then coat well in the cornmeal mixture.
- Fry the coated tomatoes in batches for 2 to 3 minutes per side, turning once, until crisp and deep golden. Transfer to a plate and repeat with the remaining slices, keeping the oil at a steady sizzle.
- Stir the mayonnaise and hot sauce together for a quick dip. Serve the fried tomatoes hot with the dip on the side.
Recipe notes
Tips
- Keep the tomato slices fairly thick so they stay tender in the middle while the coating turns crisp.
- If the coating starts to darken too quickly, lower the heat slightly so the tomatoes cook through without burning.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are pasteurised where available.
Substitutions
- Replace Buttermilk with whole milk mixed with 1 tbsp of hot sauce for tang and to help the coating cling.
- Replace Cornmeal with plain flour for a finer, less crunchy crust.
- Replace Cayenne pepper with black pepper for a milder heat.
Storage
- Refrigerate up to 2 days
- Best eaten straight away. Refrigerate leftovers in a sealed container and reheat on a tray in a 200°C (390°F) oven for 8 to 10 minutes until hot and crisp; keep the dip separate.
