Passion Fruit Juice (Fresh Tropical Juice)
Why this recipe works
- Ready quickly: A short blend and quick strain turn fresh passion fruit into a chilled drink in around 10 minutes.
- Bright but balanced: Lime reinforces the fruit’s sharpness, while sugar softens the tart edge without making the juice heavy.
- Clean, refreshing finish: Straining removes the seeds, giving the juice a smooth texture that is easy to serve over ice.

Ingredient notes
- Choose ripe passion fruit: Wrinkled, fragrant fruit usually gives a fuller flavour and more aromatic pulp than very smooth, firm fruit.
- Adjust the sweetness: Passion fruit varies widely in tartness, so taste the strained juice before adding more sugar.
- Balance the citrus: Use lime for a sharper finish, or lemon if you prefer a slightly softer citrus note.
Common mistakes
- Do not over-blend: Blend only briefly to loosen the pulp; crushed seeds can make the juice bitter and gritty.
- Strain thoroughly: Press the pulp against the sieve to extract the juice, but stop before forcing seed fragments through.
Make-ahead tips
- Chill in advance: The strained juice can be kept in a sealed bottle in the fridge for up to 2 days.
- Add ice only when serving: Keeping ice out of the stored juice prevents dilution and helps the flavour stay bright.
- Stir before pouring: Fresh juice can naturally separate in the fridge, so give it a good stir before serving.

Instructions
- Halve the passion fruit and scoop the pulp into a blender. Add the cold water and caster sugar, then blend for 5 to 10 seconds, just to loosen the pulp without shredding the seeds.
- Set a sieve over a bowl or jug and strain the blended mixture, pressing with the back of a spoon to extract as much juice as possible. Discard the seeds left in the sieve.
- Juice the lime and stir it into the strained juice, then taste and adjust with a little more caster sugar if you like. Fill a glass with ice cubes and pour the juice over the top to serve well chilled.
Recipe notes
Tips
- Blend briefly: over-blending can break up the seeds and make the juice taste bitter.
- If your passion fruit are very tart, dissolve the caster sugar in a tablespoon of the water first so it mixes in quickly.
Substitutions
- Replace caster sugar with agave syrup for a softer, honeyed sweetness.
- Replace lime with lemon for a slightly rounder citrus finish.
Storage
- Refrigerate up to 2 days
- Store the strained juice in a sealed bottle in the fridge and stir before serving, as it can separate. Add ice cubes only when serving so the flavour stays bright.
